Chicken Enchilada Soup II
This was a really good recipe! It's about as close as you can get to Chili's, although I admit it's not exact. I worked there for a year about ten years ago and ate it every day, so maybe I'm biased, but the recipe is still really really good and probably is as close as humanly possible.

Zuppa Toscana
Really there's no need to head to Olive Garden every time you're after this soup. I've made this recipe a million times over and you just can't tell the difference in the taste. The great thing about making it at home, is that now that we're eating healthier, it's so easy to modify to fit that. I either leave out the bacon, or just use a few slices, use lo-fat milk instead of cream, and sometimes use 1/2 sausage and 1/2 ground turkey. And FYI, whether you're making it exactly like the recipe or a lo-cal version, spinach is fabulous in place of kale and much easier to find!

Rainbow Veggie Chili
My husband and I are not Vegans, but had been on a voluntary "fast" with our church that had us eating only foods eaten by Vegans, with a few more restrictions. I found this recipe and we both really liked it. Be warned, it is SPICY, but really good. The next time I'd probably cut some of the ingredients that make it so hot, since my kids couldn't eat it, but other than that it's great. I actually served it over brown rice.
