Blonde Brownies I

Reviewed: Dec. 20, 2009
Very easy to make, in fact no need to drag out the mixer. I used chopped cashews in lieu of walnuts, and used about 1/3 cup of whole wheat, because in sweet baked goods you can do this without ruining the flavor. Perfect moistness, with a little firmness.

Garlic Chive Chicken

Reviewed: Dec. 2, 2009
This was one of the best chicken dishes I've had in a while, and I'm giving this the full 5 stars, but only after my adjustments, which were not major. Most importantly, I used half the amount of chicken, so if you're following the recipe as written, double everything but the chicken, or the sauce will not be sufficient. I cut the raw chicken into bite sized pieces before tossing in flour, and deep fried it until light brown. Everything else I did the same, except I fried the chives in the sauce for a few minutes at the end. This was devoured!

Citrus Turkey Brine

Reviewed: Oct. 13, 2009
As others have stated rubbing the salt is not necessary, it will be soaking in brine overnight. This was an awesome recipe. I have brined before, but using citrus was the best! I added a tart apple and sage as well.

Amazing Whole Wheat Pizza Crust

Reviewed: Jul. 15, 2009
This is the best thin-crust pizza dough recipe I have found yet! I just mix it up in the food processor and it turns out perfect every time! The flavor of the dough really shines through, it's not just a toppings holder. To make this dough even better and easy to manage, add about 2 Tb and 2 tsp vital gluten. Let the dough sit overnight in the refrigerator and bring it out about 2 hours before you're ready to stretch it out. Amazing what a difference this makes.

Tomato-Dill Shrimp Stew

Reviewed: Mar. 9, 2009
It seemed like a lot of dill for the recipe, so I used tarragon instead, about a tablespoon, and it was perfect!

Burrito Pie

Reviewed: Feb. 24, 2009
This is a nice little, easy recipe that can be easily tailored to your specifications. I used soy ground beef, some leftover salsa, mozzarella and of course WAY more garlic than in this recipe as my changes and it was delicious. It makes great leftovers too!

Award Winning Soft Chocolate Chip Cookies

Really awesome cookies! I added a little bit of full fat cocoa and left out a little of the pudding mix to make them a little more chocolaty, and they were amazing!

Purple Plum Pie

Very easy to make and absolutely wonderful. I thawed out plums I had frozen and they worked just fine. Also, I reduced the sugar in the filling to half of what was called for and it was perfect.

Garlic Chicken Kabobs

Excellent, very easy recipe. I used thigh meat instead, and substituted Italian parsley for cilantro. Marination time was at least 4 hours. It came out tender and juicy.

Delicious, but I found using all purpose flour I had to increase the amount of flour to 1 1/4 cups.

Chewy Chocolate Chip Oatmeal Cookies

Fantastic! Definitely let these cool completely before trying to remove from the cookie sheet. I substituted a couple Tbs. of rum for the vanilla and it gave it a wonderful aroma and taste.

Tzatziki

Reviewed: Nov. 3, 2007
Amazing and simple! The key to this recipe is draining the yogurt with the cheesecloth. This will thicken the yogurt considerably. It makes the tzatziki more versatile since now it can be better used as a spread.

Turkey Posole

Reviewed: Oct. 22, 2007
I don't know about the authenticity of this recipe, which some reviewers were apt to comment on, but this soup was outstanding! It was very easy to make, provided all ingredients were on hand, like cooked turkey and turkey broth. It is the perfect thing to make from the leftovers of a turkey dinner, if you don't use the broth for gravy. I used romano and kidney beans, and whole kernel frozen corn, and it came out great.

Very easy. I used the food processor too. I halved the recipe for one crust. It turned out very easy to roll out and stretch, and it was light and crispy.

Shrimp Provencal

Awesome recipe! Very easy. I took the advice of some other people here and reduced the tomato paste to half, and increased the garlic a little. Also, I added the basil a few minutes before the ned of cooking to let it combine.

Rhubarb Dream Bars

Reviewed: Jul. 21, 2007
Excellent recipe, try these alterations: to make the bottom part melt the butter (only use 2/3 cup) and use brown sugar. As other reviewers have said use 2 cups instead of 3 for the top part, and I used whole wheat flour on top as well. So overall, a lighter recipe, and a very good alternative to cake or pie.

Try this for added flavour: Increase water to 1 cup, and oil to 3 Tbs. Add 1 Tb each of oregano and thyme, and 1/2 tsp garlic powder (not garlic salt). Add 4 Tbs. sesame seeds.
