Winter Squash Rolls

Reviewed: Dec. 28, 2007
Tasty, but they didn't seem to want to get done! I found the finished rolls to be a bit gooey, even after an extra 15 minutes of baking. . .but other folks at my Thanksgiving dinner really liked them! I'll have to keep playing with it, and find the right set-up.

Crusty White Bread

Reviewed: Dec. 28, 2007
Ok, as with other reviewers, I had to add additional flour, about 1.5 cups, but that's nothing on the recipe. Flour is very persnickety, and what was a perfect 6 cups for her one day may not have been, even the next! I really like this recipe- it reminds me of my grandmother's recipe, in taste, but somewhat of French Bread in texture. It doesn't have a pronounced flavor, but I've come to expect that of white bread, and this one has much, much more flavor than anything you buy in the store! I made this to use 2 slices in Ricotta Gnocci, but was just informed by my 7-year-old that this is a repeat recipe. Thank you! It's lovely!

My kids really enjoy it! I hope for more flavor in my pork chops, but I can't argue with success!

Strawberry Shortcake

Reviewed: Nov. 10, 2007
I tagged it at five, because I made it with Cool Whip. . .and I will never, ever use Cool Whip for strawberry shortcake again! It would have been MUCH better with real whipped cream, and since that is what you call for in the recipe. . . This was really good!

Oyako Donburi

Reviewed: Nov. 10, 2007
I first had this at a restaurant here in Phoenix, and I was delighted to find it on Allrecipes! I change my recipe a bit, but only in that I use a whole bag of frozen stir-fry veggies, and add an egg or two. It feeds my whole family, and they LOVE it! Edited to add- I add a dash of sesame oil, and it gives a wonderful boost to the flavor of the dish!

Grandma's Polish Perogies

Reviewed: Nov. 10, 2007
Made for a church International Dinner. . .Went like hotcakes.(I love perogies! Especially fried with butter and onions!) But if you need to makes some without cheese, make sure you label them as such! Mine got mixed together, and the lady I made the ones without cheese for couldn't tell which was which, so she didn't have any. . .:(

Monster Cookies II

Reviewed: Nov. 10, 2007
This was fantastic! I had to have my husband stir in the last 3 cups of oats, and the choco chips and M&Ms, but I baked all of them. . that took about 1.5 hours! Yum!! These are for a bake sale at church. . .you can't go wrong with monster cookies for a bake sale! I have 6 dozen to sell, and still more than 3 for my family to enjoy! Thank you!

Raspberry Vinaigrette Dressing

Reviewed: Jul. 23, 2007
We really loved this, although I made a number of modifications. I used plain Balsamic in place of the raspberry vinagar (didn't have it), and olive oil. . .I also used some fresh raspberries, because without the raspberry vinagar, it doesn't fit it's name! I also cut the sugar by half. My family loved it, but I think it could have used more sugar! (tart. . .) It was really nice, I'll use again! (as written, most likely!)

Citrus Salmon in Parchment

Reviewed: Jul. 23, 2007
My family loved this salmon. The only change I made was, as someone else said, dried dill for the fresh, because I failed to tell my husband that it should be fresh. Hehe. One thing you should try is to squeeze the citrus slices over the fish after it's cooked. It really added a punch to the flavor! I also had to make a modified lemon pepper, because I didn't have any. I used lemon and lime zest, and pepper, but I think I needed salt, too. All in all, it was great! I'll use this cooking method for fresh fish again, it came out better than any I've ever made! Thank you!

Layered Eggplant Hamburger Casserole

Reviewed: Feb. 21, 2007
My family loved it, and I enjoyed it too, even though I'm not a big eggplant fan. I modified it a bit, because I didn't have canned tomatoes or paste- I used a jar of spaghetti sauce, and it worked well. I also used about a cup and a half of mozzarella instead of the parm, inbetween layers. I used almost 2 whole eggplants, and 2lb of ground beef. Thank you for the inspiration, I hope others love it too!

Sesame Chicken Strips with Sweet Sauce

Reviewed: Aug. 14, 2006
Pretty good, my husband liked it and he's not fond of mayo. I used Miracle Whip, and had to use some whole flaxseed because I was low on sesame, but it came out really good!(I used whole wheat saltines, too, in place of Ritz) I skipped the sauce (*way* too much mayo!), and made a sweet and sour sauce instead. My kids really liked it too!

Sweet and Sour Dipping Sauce

Reviewed: Aug. 10, 2006
We loved it! I didn't have brown sugar, so I used white sugar and a touch of honey, and it was the first time I'd ever had sweet and sour sauce that was actually both sweet and sour! Definite repeat!

Rich Mexican Corn

Reviewed: Mar. 2, 2006
It was wonderful, though I made a modification, using a can of mild green chilies, because my kids don't like spicy foods, and I didn't have jalepenos anyway. I'll try it with the jalepenos some time, though, because without the seeds, they're really mild, and add wonderful flavor! Thank you!
