Mulligatawny Soup I

This is different than what we get at our local Indian restaurant, but it is absolutely delicious. I made it just like the recipe states, except that I doubled it. I wish I had quadrupled it. There were no leftovers for our family of 7.

Made this as written, except that I doubled everything. It was perfect. The whole family enjoyed it. Served it with some hearty sourdough bread. Mmm. We'll definitely be repeating this!

Baked Omelet Roll

Mmmm. I doubled the recipe and baked it in two pans. I thought I had done something wrong when it puffed up in the oven, but when the cheese was added, it fell and rolled up perfectly. The family enjoyed it for a weeknight supper, served with some ham and whole wheat carrot-raisin muffins (from this site).

Sweet Bacon Wrapped Pork Loin

This was delicious, may try marinating next time. I loved the reduction it made. I soaked the raisins in boiling water to plump them up before baking, and used a tent of foil. They were perfect, not dried up or hard. Served it with BREAKSTONE'S Curried Mashed Sweet Potatoes from this site.

Fantastic! I was looking for a recipe for sweet potatoes that didn't add sugar, or marshmallows. This was absolutely delicious, the whole family loved it. The curry is just enough. It was a perfect side dish to a roasted pork loin. Mmmm. By the way, I made the recipe as stated with no substitutions or alterations(except for the brand name-sorry-it's not even available in my area).

Bev's Chocolate Pie

Made this for an aunt that requested chocolate pie. I'd never made one before, so I really was nervous. This pie was delicious, and it passed her test! It did take a lot longer than 35-40 minutes to bake until it was not "wobbly" (maybe because I had a casserole baking as well) but it finally got to that point-I thought I'd ruined it because it looked dry, but I put the meringue on anyway and when it was all done, it was beautiful. We ate it while it was still warm, and it was not runny, and it was not dry, just a delicious chocolate pie. I'll be making it again!

Cabbage Roll Casserole

LOVED this!! I used brown rice (it takes more liquid than white) but other than that left the recipe alone. Wonderful comfort food, and so easy to make, this will be making regular appearances at our table.

Peach Pie the Old Fashioned Two Crust Way

This pie tasted wonderful, but I was disappointed in how it was a bit runny and made the pie crust soggy despite the egg and draining the peaches. Maybe I just need some practice with it.

Grandma's Secret Pie Crust

This recipe produced the best, flakiest pie crust I have ever made, and I've made a lot of pie crusts! I did use butter instead of shortening because I don't like shortening. The butter was hard cold (nearly frozen) and I only cut it in until the size of peas.

Indian Style Basmati Rice

Tastes just like my local Indian restaurant! I never substitute ground spices for the whole ones. After making this a few times I switched to using Jasmine rice, skip the soaking, and change the amounts to 2 cups jasmine rice and 2 cups liquid (I substitute chicken broth if I have it on hand). Wonderful flavor! At the end I throw in a handful of frozen peas. It only takes a minute to steam them then stir them in. Very easy to make!

Tuna Curry in a Hurry

I can't think of a better way to prepare canned tuna! My family loves this. I always double it, I sometimes substitute yogurt for the sour cream, and throw in some frozen peas. Also, we like to add a bit of tomato sauce. I like hot curry powder, but the family prefers the regular (I always add more than the recipe though). Best served with Indian Style Basmati Rice from this site that is easy too.

Tamale Pie II

This was a great recipe to start with. My family enjoyed it as is, but I'd like to play with it a little to get a more "tamale taste". I'm wondering if using masa instead of white cornmeal will work. My only issue with the original recipe is that the cornmeal part was a little bland, and it did not fit in a 2 qt. casserole dish. Needed a bigger one.
