Whole Grain Waffles

Awesome waffles! Took no time at all to whip up, and did well with my substitutions. =] Subs: rice milk for cow's milk, & oat bran for wheat germ.

The Best Rolled Sugar Cookies

The name says it all! I like my sugar cookies really soft and chewy, so I rolled mine pretty thick and cooked for less time. I wouldn't change a thing about the recipe otherwise. :)

Delicious Ham and Potato Soup

It's hard to rate this fairly because we made this dairy-free using vegan butter and soy milk. Even then, it turned out very well. I just added some extra flour to help thicken it since we didn't use cow's milk. Next time I will probably double the ham (at my husband's request) and cook the potatoes MUCH longer. I still had some crispy guys in there. :)

Banana Crumb Muffins

Excellent recipe. The touch of cinnamon in the topping is barely detectable but adds a ton to the whole recipe. I subbed out 1/2 c. regular flour for whole wheat flour. Still fabulous. :)

Homemade Wonderful Bread

Very tasty, easy, and cheap bread to make. I replaced the dry milk & 1 cup of water with 1 cup of real milk. I added an additional 1/2 cup of water per other's suggestions.

Beer and Brown Sugar Steak Marinade

This is a craveable marinade. The cooking instructions included with this are also excellent. Changes--I used a pale beer instead of dark. Because of this, I would increase the marinating time next time if I use pale ale. I could have used a little more flavor.

Zucchini Alfredo

If I could give this 4.5 stars I would. I omitted the basil since I didn't have any fresh and I couldn't see dried tasting good in this dish. I subbed soy milk for milk (as I do in almost all recipes). The reason I didn't give it 5 stars is because it congeals really quickly when it starts to cool. I think I would lower the cream cheese and up the milk next time to see if this helps the texture.

Chicken Florentine Casserole

Very good recipe. I followed the other suggestions and sauteed the mushrooms and spinach with a little wine before putting in the oven. I also cut up my chicken and boiled it, then baked the dish for 25 minutes at 400deg. The sauces is excellent. We can't do milk and I had success making this with soy milk. :)

Taco Seasoning I

Jamie's Minestrone

I had my doubts while I was cooking this, but this soup turned out FABULOUS. I didn't have the issues others did with it being too thick, either. *Changes* I used 1 can tomato paste + 1 1/2 cans of water per cup of tomato sauce called for. I also subbed potato for zucchini since I sadly had none. I also used white wine instead of red, added an extra can of kidney beans and omitted the green beans. Like another user, I did not use pasta. I might add some in for my husband if he wants it so it's more hearty. Otherwise I followed the directions and ended up with a HUGE but wonderful batch of Minestrone. This puts Olive garden on a run for it's money!

Ruth's Grandma's Pie Crust

I have tried many crust recipes and this is by far my most favorite! I had a very easy time rolling out the dough--no cracking, crumbling, etc. To get it in the pie pan I just rolled the dough up and then unrolled it into the pie pan. I had enough dough to very comfortably make 2 crusts with this recipe. Very flaky and tasty crust. It's a keeper for sure! Would make GREAT pie crust cookies!

Summer Lasagna

Excellent! I did make a few changes though to fit my tastes. I used red pepper instead of green (less acidic). I doubled the cheese amounts, used trader joe's 3-cheese spaghetti sauce, and I used ricotta instead of cottage cheese. Otherwise I made it to a tee, and it turned out WONDERFULLY. I will be making this again and again.

Brown Sugar Meatloaf

Strawberry Bread I
