Chicken Pot Pie IX

Love this pot pie! So simple to make and tastes so good!! I use a bag of mixed vegetables to make it easier.

Easy Pumpkin Muffins

oh my gosh! These were so yummy and easy. I actually was surprised they turned out so well! I followed the recipe ingredients exactly. I used a hand mixer though, which helped the muffins rise. I added a crumb topping, but I'm sure they will be just as good without it! Yummy!

Mediterranean Bean Salad

So refreshing and delicious! Wow! I couldn't stop eating it. I'm not a huge fan of bean salad. All the ones I've ever tried were just bland, but this was out of this world. Since I've never made a bean salad before, I was afraid to vary to much from the original recipe, but I did make two tiny additions...I added a small clove of minced garlic (fresh) and a little bit of pepper. I wouldn't use cherry tomatoes as I thought the cut up tomatoes added to the "sauce". Perfect.

Chicken and Bacon Shish Kabobs

Excellent! I marinated the mushrooms separately and used that marinade to baste the kabobs. I omitted the bacon and used fresh pineapple, onion, green peppers and tomatoes on the skewer. It was unbelievable! This will be our only kabob recipe.

Chicken Tetrazzini IV

so yummy. I made small changes. Used fresh mushrooms and sautéd them with garlic and onion. Just used milk instead of cream and shredded parm, romano, & asiago cheese on top.

The egg nests are great, but this recipe isn't as complete as the one that is listed on the official rice krispie recipe site. I followed that recipe and they were sooo cute!

Porcupines

These were great! I've never eaten or made anything like these before. My family loved them. I followed the directions for making the meatballs and they did not fall apart. I used beef broth instead of water for the sauce and had to double it half-way through cooking because the rice meatballs soaked up all the sauce. Very tasty!

Broiled Tilapia Parmesan

WOW!!! The best fish ever!!! So fast and easy. I'm always intimidated when cooking fish, so usually I don't bother. I will be making this again and again. Hubby loved it! I used "Kraft Mayo with Olive Oil", which saved cal & fat and used 1/2 grated parm & 1/2 shredded and omitted the celery seed. Excellent!!!!

Home-Style Vegetable Beef Soup

The best vegetable beef soup!! I actually had a bunch of leftover homemade spaghetti meat sauce and meatballs (I did cut those up) that I used instead of the tomato juice. It worked out PERFECT since it was already made with onion, garlic, green pepper & Italian herbs. Then I added beef broth and a little water. Threw in all the vegetables, with the addition of celery and cooked it for about two hours. WOW!!!

Chicken Florentine Casserole

We loved this!! It is one of the best chicken dishes I have ever had! I made minor changes. Browned the chicken in olive oil instead baking in the oven (yuck). After melting the butter I sautéed the garlic and added onion, sliced into rings. Then I added all the sacue ingredients to the garlic & onions. I used milk instead of half & half. Then I sautéed the mushrooms with a little olive oil in the same pan I used for browning the chicken. Then I added a bag of FRESH spinach and poured a tiny bit of chicken broth over the mushrooms & spinach and cooked it for about a minute until it was soft. Put the spinach mixture on the bottom of the baking dish, topped with chicken and then poured the sauce over all of it. I put fresh shredded parmesean cheese on it instead of mozzarella. Cooked it at 350 for 30 minutes. Probably will cook only 20-25 min next time. So yummy, it was unbelievable!! I served it over rice.

Perfect Sesame Chicken

So yummy!!! My husband couldn't stop raving about it throughout dinner. My toddlers loved it too! I made a few minor changes...I didn't use the sherry. I only used 1/2 cup of sugar and I only used a few tablespoons of oil to cook my chicken. Turned out perfect.

Skillet Ham, Cabbage and Potatoes

Excellent!! It does taste better with kielbasa sausage instead of ham. I tried both the first time I made it. I used turkey kielbasa from butterball and it just gave it more flavor.

Country Fried Steak and Milk Gravy

Great recipe! Instead of dredging in flour a second time I used Italian seasoned bread crumbs. And I fried it in some butter and oil, although the butter was probably not necessary. We all loved it.

Pistachio Crusted Chicken

Sweet-and-Sour Meatballs

WOW!! We just got done eating this for dinner and it was fantastic! My husband and two year old loved it as well. So easy to make! I did add a few items...I added some dry bread crumbs to the meat and mixed red bell pepper and onions wirh the green pepper. You've gotta try this one!
