I was skeptical, mayo... ewwww However, it was quick, easy and most of ALL amazing. I asked my son what he wanted for his family birthday dinner and he said, "hmmmm can you make that amazing chicken we had the other night". YaY, I was so happy because it is easy. I used italian panko bread crumbs and took the suggestion of another reviewer and added a packet of italian dressing (organic). I am making it for about 20 people Sunday, hopefully it is as amazing as the first time!! Thanks for sharing.

Absolutely wonderful flavor. I love carrot cake but this one was moist, light and was packed with flavor. Don't skip on the toasted coconut or the sprinkle of walnuts on top. They most definately add to the awesome flavors of this recipe. Thank you for sharing.

OMG!! Totally without a doubt a wonderful flavor that was not expected! I used a muffin top pan instead of a regular muffin pan... the tops are the best part anyway, right! I used organic ingredients. I used 1 cup organic flour and a half cup whole wheat organic pastry flour. They were so moist and flavorful. I almost opted out of the topping, boy am I glad I didn't. When my eight year old took his first bite of the banana muffin the look of pleasure on his face was priceless!! This recipe is 10 stars in my book!! Thank You for sharing.
