Caramel Popcorn

First time caramel popcorn maker, and must say it was easier than I thought. I made this recipe as gifts for Xmas. I added pecans to the recipe which added another touch. Next time I just might forgo the popcorn and just use the sauce with the pecans. I was a little concerned with my first batch when the "sauce" didn't cover the popcorn before going into the oven, but the stirring every fifteen minutes made everything turn out well.

English Trifle

A nice looking dessert. I used sugar-free vanilla and cool whip instead of whipping my own cream. Also added raspberries, instead of the cherries and used pound cake, which gave a good texture to the dish.

Sherry Apple Pork Chops

Pretty tasty (thanks to the sherry), but a little liquidy for me. I had to add cornstarch to thicken it up a bit.

Easy Summer Pie

Wasn't really a huge fan of the pie crust as the "pizza dough". Tried using a sugar cookie dough and was much better. I did like the cream cheese spread after adding just a touch of vanilla to it.

Fruit Pizza I

Cookie dough is so easy to make that it's worth making than buying dough from the store. I placed the dough on a pizza stone and it turned out great. Made a good 16" pizza. Added fresh thinly sliced peaches, blueberries, raspberries, and blackberries. I will definitely be using this recipe again.

Chewy Chocolate Chip Oatmeal Cookies

Great oatmeal cookies. I added about 1/4 cup less of the white sugar, and only 3/4 cup of butter. The cookies were still moist and flavorful. I also cooked them for about 3 minutes longer.

Stovetop Granola

I took the advice of others and added another cup of oatmeal. This granola was great and easy. I added pecans and raisins. I won't have to buy granola at the store anymore.

Grandma Johnson's Scones

Made a batch and added chocolate chips. Before placing in the oven I also sprinkled some sugar on top of the scones. Very good. I also froze some scones to see how they would be when defrosted, and they still tasted great. This is a good base recipe for scones.

Blueberry Sauce

Made this without the almond extract and cinnamon. Only added a maybe a 1/4 Cup of sudar. Turned out great and it was very simple. Used it on a cheesecake I made.

Chorizo Stuffed Bell Peppers

Instead of the uncooked rice, I used some leftover rice and adjusted the liquids used. This recipe wasn't spicy enough for me. Although I only used cheddar cheese (didn't have the others), I would probably use pepper jack to kick it up.

Mocha Chocolate Chip Banana Muffins

I just had to try the recipe after all the great reviews... glad I did. I followed someone's suggestion about using a 9"x13" pan. Worked really well, just had to bake a few minutes longer. I also added a handful of chips on top of the mix before I baked. This was unbelieveably moist. Didn't even add the coffee.

Cranberry Hootycreeks

I have made this recipe for the past two years. And the main reason is because I get so many requests for this cookie. I also prepared the jars and printed the recipes on nice paper, which I strung around the neck with ribbon. Plus I re-arranged the ingredient order to give the jar a more colorful look. Very simple, yet very impressive.

White Chili II

I was really surprised with this recipe. It was great and my husband had seconds. I added more cumin and less chicken broth (about 1 and 1/2 cans) to the recipe. I then chopped green onions and cilantro, placed sour cream and cheddar cheese out so we could add to the dish as we wished. I think having the leftovers were even better.
