I never enjoyed cooking until I met my husband. Being born and raised in Miami, I was more concerned about sticking to a diet than taking the time to enjoy a good meal. Once I realized food was not my enemy and everything can be enjoyed in moderation I learned to love food and the art of preparing it. My husband and I moved out of Florida and have traveled the Northwest selling his paintings at local markets and art shows. He has been invited to sell his paintings full time at Pike Place Market in Seattle, WA so I am very excited to add FRESH seafood to my cooking repertoire!!
My favorite things to cook
I love to make fresh pasta, store bought just won't cut it anymore. I also enjoy baking cakes and cookies. One year I made 48 mini bundt cakes and a couple regular size cakes for my in-laws for the holidays, totaling six different recipes. Thank goodness I moved to the other side of the country because now they expect a lot of cake when I am around.
My favorite family cooking traditions
My grandmother is the greatest cook I know. I always have such high expectations when invited over for dinner and she never ceases to amaze me. I once stole a cookbook she gave my brother when he left for college because I was jealous. I love trying recipes from her cookbook and I am constantly calling her for new ideas and basic cooking tips.
My cooking triumphs
My husband and I rarely eat out, and when we sold our home and moved into an RV full time I was worried I would have to find all new recipes, or eat out more (not so good on the wallet or the diet). I am happy to say I have mastered RV cooking and baking and the only difference is smaller pans, therefore smaller dishes (great on the wallet and the diet).
My cooking tragedies
When my in-laws came to visit us for the first time in our RV I did not want to disappoint them by not baking a cake (see above). I baked one of my favorites, Cinnamon Coffee Cake II, but I decided to leave the walnuts whole instead of chopped. I always use a bundt pan and unfortunately the walnut mixture just sank to the bottom (or top since it's a bundt) and then the cake stuck to the pan. I thought it was totally ruined, but my father-in-law thought it was the best tasting cake he ever had. I was happy since I satisfied his huge sweet tooth, but still embarrassed at the site of my cake.
