Roasted Kohlrabi

Delicious! Got these in my CSA box and didnt know what to do with them. Didnt make very many with 4 small bulbs. I can easliy eat them all myself. DIdnt roast for more then 15-20 minutes total since I cut them thin.

Stuffed Green Peppers I

Great healthy dish! Following other reviews- I added a bit ore worstershire. I also put a bit of cheese on the bottom of each pepper along with the salt. Put half meat mixture in and some tomato sauce on top then added the rest of the meat with the remaining sauce and topped with the cheese. I also added some tomato paste to the tomato soup since I had a can opened already. I cooked the rice, onions and garlic seperately and added to ground turkey at the end.

Low Carb Cauliflower Leek Soup

SO easy and delicious! Had a few changes due to what I had on hand. Only used half head of cauliflower and didnt have broth so I poured about 5 cups of water with 5 small chicken bouillon cubes. I did not add cream at the end and it did not need it at all.

Grilled Marinated Shrimp

DELICIOUS! reserved marinade to brush on shrimp but i forgot p i used it for dipping sauce- couldnt get enough of it. i dont think you need that much oil. i prob cut in half.

Fabulous Fried Cabbage

Good recipe for cabbage. However I did make a few changes (of course~) Did not use the chicken broth. Sauteed shredded cabbage (put in food processor) in cast iron skillet with melted butter and sauteed onions. Does NOT take 45 minutes. Put in a little onion and garlic powder and then a chicken boullion cube with a little water. This was good with egg noodles.

Roasted Beet Wedges

Delicious! I didnt follow the recipe to teh T (of course...)- didnt have fresh rosemary on hand but not a huge fan of the herb anyway... Just sprinkled with EVOO and salt and roasted. Put ontop of salad with gorgonzola cucumbers green onions and lettuce- sprinkled with bals vinegar and EVOO. YUM!

Lentil and Green Collard Soup

Made minor changes- sauteed 1/2 garlic with onion and other half with collards. Used brown lentils. Forgot salt altogether and added at the end- too much kosher salt and ruined the soup :( I also forgot to add lemon juice! Still the soup was good- I will give it another try- a right try this time!

Baked Beans II

These were great with a few changes - cut sugar and ketchup to 1/4 c like others suggested. Beans are sweet enough as is.. Used plain baked beans- not pork. Put in crock pot- high for 4 hours with 3 slices bacon ontop. They were SO easy to make- will def make again. Thanks!

Baked Kale Chips

Neat way to use up kale. Mine was a little too salty though. I went by another review and used soy rather then salt. Maybe that is why. I also sprayed with olive oil mister and didnt have parchment paper so it stuck to the pan. But tasted neat!

Rhubarb Dumplings

Delicious! Made 2 times in 2 days! The type of biscuit made a difference for me. The first time I used smaller biscuits- buttermilk, and they turned out better then the grand biscuits with butter. I also cut up a strawberry in each one. Do NOT need all that sugar- will be too sweet...

Blueberry French Toast

UMM! I did NOT soak overnight and this was fine! Let it sit on counter for about 1/2 hour while oven heated up and that is it! It was great- I think that soaking overnight may even make it more soggy? Halfed the recipe and for sauce used about 1/4 C sugar- PLENTY sweet! I also added a bit of vanilla to the egg mixture and sprinkled cinnamon ontop of top layer of bread. Made in 8x8 baking pan which was a little hard to clean up. I may switch to glass pan next time. And would like to top off with homemade whipped cream! Will def make again- great way to use up stale bread!

Rhubarb Pudding Cake

This was SO tasty! Even husband who "doesnt like rhubarb" ate almost the whole thing! I made a few changes.. I didnt have 3 cups- only 2 Cups of rhubarb. Added about 8 large strawberries cut up.. Halved everyting else but the water at the end which I think is what made it very very hard to scoop up. I am getting more rhubarb today to make this again- it lasted a mere 15 minutes in my house. Great with some whipped cream on it!! DANGEROUS>>

Cucumber Sandwiches III

Didnt have time to let flavors meld in fridge but everyone still loved these! Will def make again and I think that I would add some sour cream this time. Light and delicious!
