I loosely followed the Creole spice mix given in one of the reviews and added a can of creamed corn. I was going to use a can of corn but I ended up opening a canned of creamed corn by accident. It turned out GREAT! A happy mistake. Very healthy and very filling.

Fresh Asparagus Soup

Excellent soup! I've made this one twice already. I like to add a can or two or corn to it at the end. Also I use cornstarch which I prefer to flour because less is required.

Chicken Fiesta Salad

This turned out very good. I used 1 chicken breast that I poached instead of frying it and used some tofu as well. My boyfriend didn't even notice the tofu haha! I also added a little bit of cilantro for garnish and some corn chips. Delicious and fast and easy! I will definitely make this again.

Patti's Mussels a la Mariniere

Wow! I just made this for dinner tonight and my boyfriend really didn't want to have any because "he doesn't like them". I made him have a little and he couldn't get enough. He said he want me to make them again and was upset because there wasn't enough. I added a pinch of chili flakes and a little dried basil. The spice from the chili flakes worked really well. I'll definitely be making this one again.

Texas Corn Chowder

Big hit! I absolutely love this recipe. I modified the amount of corn used in it because I am a big corn lover. I used about 5 cups of frozen corn and followed the rest of the recipe to a T.

Butter Bean Burgers

This recipe was a HUGE hit with my family especially my very carnivore hubby. The day after he kept asking me when I was going to make it again. I used lentils instead of butter beans and it really was excellent. Definitely a keeper. Thank you for sharing!

Sweet Pork Chops

I really enjoyed this recipe as well as my 3 year old. My husband however is not a fan of meat and fruti combinations. He ate it though and took some for lunch so he couldn't of have disliked it that much. I used cornstarch instead of the flour and milk to cut back on the calories a bit. Thickened right up and had no troubles with lumps.

Carrot and Coriander Soup II

I made this for lunch and my kids ate it fine. I enjoyed it as well but next time I would either add more carrots or use less water to make it a bit thicker. Maybe add some squash. As well maybe play with some spices, I do like the fact that it doesn't call for salt. Overall it was fast and easy and I will probably make it again.
