Quick and Easy Vegetable Soup
I loosely followed the Creole spice mix given in one of the reviews and added a can of creamed corn. I was going to use a can of corn but I ended up opening a canned of creamed corn by accident. It turned out GREAT! A happy mistake. Very healthy and very filling.

Fresh Asparagus Soup
Excellent soup! I've made this one twice already. I like to add a can or two or corn to it at the end. Also I use cornstarch which I prefer to flour because less is required.

Chicken Fiesta Salad
This turned out very good. I used 1 chicken breast that I poached instead of frying it and used some tofu as well. My boyfriend didn't even notice the tofu haha! I also added a little bit of cilantro for garnish and some corn chips. Delicious and fast and easy! I will definitely make this again.
