Working mom always looking for quick & easy (yet nutritious) recipes to make on weeknights or weekends.

Comfort food, desserts, anything quick & easy that my family will eat!
My favorite family cooking traditions
I usually make 7 different types of Christmas cookies - 4-5 traditional recipes with 2-3 new treats thrown in.
My cooking triumphs
I love entertaining and have a wonderful process for cooking Thanksgiving turkey that comes out great every time.
My cooking tragedies
Once I forgot to check mom's oven before preheating and unbeknownst to me she had Tuppeware stored in it. Wow that's a smell and a mess I'll never forget!

Truck-Stop Buttermilk Pancakes
Absolutely, hands down, the very BEST recipe I've ever found for pancakes. Well, the name says it all! I found them to be just the right thickness and fluffiness and next time will be adding fresh blueberries too. Two things to note: if you don't use cooking spray (and instead cook directly on a teflon pan) your pacakes will have a smoother texture and 'prettier' look to them. Also, be aware that this recipe makes generous portions. I scaled it to half (6 servings) and it made enough for 8 people to have 3 medium pancakes each. I like to put the leftovers in the freezer for use another day - just reheat them in the toaster or toaster oven and they're just as good as fresh.

Chocolate Bourbon Pecan Pie
Wow this was WAY heavy on bourbon - it made it nearly impossible to taste anything else. The big drinkers in my group loved it but it was way too strong for my taste.

Slow Cooker Corn Chowder
Awesome recipe! It is a great dish to feed a crowd, accompanied with sandwiches.
