Slow Cooker Chicken Taco Soup

This soup was awesome! It tasted so good, I could hardly believe I made it! And it was so easy and the kitchen smelled fabulous all day. The only changes I made were to use Mexican style kidney beans that I happened to find at the store, 1 14.5oz can of diced tomatoes (only b/c I read the recipe wrong), and only 2 chicken breasts b/c they were all I had (and to be honest, I think it was plenty). This is going to be the perfect thing after coming in from the cold here in Chicago. Thanks for such a good, easy recipe!

Mini Pineapple Upside-Down Cakes

I gave these 4 stars for taste, but they weren't very pretty. I used regular sized muffin pans, so I cut the pineapple rings into quarters and used 2 per cupcake. I also baked the cherries into the cake as others suggested. Because the pineapple pieces didn't cover the whole surface of the cupcake, there were gunks of butter/brown sugar in between that didn't look very appetizing. If I did this again I would definitely use the jumbo muffin pan so that the rings fit better. Still, they are tasty and very moist (borderline soggy in fact, but good). And though they were a little extra work compared to regular cupcakes, it really didn't take that long to put them together.

Shrimp Scampi V

This recipe was great! Very quick and easy, but definitely not lacking in flavor (I was generous w/salt and pepper). I used 1/2c of wine and 1/2c chicken broth and frozen, pre-cooked shrimp, which I soaked in water/lemon juice (as per another reviewer's suggestion) and added them at the very end. I couldn't believe how good it was for as easy as it was to prepare.

Slow Cooker Ham

This ham was awesome! I made it for my first Easter dinner and it got rave reviews. I used a 9lb spiral cut smoked ham, and since it was already cooked, it was actually ready after 3.5 hours on low. I will definitely make this again!

Gina's Lemon Pepper Chicken

I usually try to follow recipes exactly the first time around before tweaking it, but since other reviews said this was a little bland, I thought it would be more flavorful to brown it first in some butter and lemon juice. I also used the proportions of spices that the recipe called for but a more generous amount. Hubby and I both loved it -- quick and easy, with a nice light flavor. Low fat too!

Basil Chicken and Pasta

This recipe is awesome! I've made it as is, which is very good, and I've also made it with a little cajun seasoning and a little lemon pepper, which I thought was even better! Also, I rarely have heavy cream on hand, so I use 3/4 cup of milk and 1/3 cup butter/margarine instead, and I would definitely recommend doubling the sauce. Thanks for a great and super easy meal!

Grilled Sausage with Potatoes and Green Beans

Good and easy. I followed other reviewers' suggestions, and cooked in the oven at 425. I should have microwaved the potatoes first though, because they still weren't quite done after 40 minutes and the green beans were wilting. Also, I seared the sausage with Worcestershire sauce and some fresh garlic before I put everything in the oven. This recipe tasted great, even if it took longer to cook than I would have liked.

Lime Garlic Chicken

This recipe was great! So quick and easy! I had never sauteed in butter before, but I gave in this time, and boy was it worth it. Chicken was tender and juicy and the flavors were a great combo. Thanks for sharing!

Spaghetti Carbonara II

Spaghetti carbonara is one of my husband's favorite dishes -- I never knew it could be so quick and easy! I combined the parm and the eggs before adding to the spaghetti, as others suggested, and that worked well. Thanks for the recipe!

Mexican Style Shredded Pork

This was awesome! Tender, flavorful and SO easy! I put the tenderloin into the slow cooker whole (instead of cubing it), and about an hour before it was done, shredded it with a fork and added some more chipotle sauce to make it nice and saucy. We ate it in tacos w/Mexican rice and beans on the side. Definitely a keeper!

Broiled Red Potatoes

These were good. I used Russet potatoes and cut them into wedges instead, as another reviewer suggested. They weren't as crispy as I would have liked, but I'm sure if I had a little more patience to leave them in the oven longer, then they would have been. Even so, they were really good. 4 stars for flavor and 5 stars for being so easy!

Colorful Chicken Pasta

I have to give this 4 stars because it was so easy! The only addition I made was some fresh garlic, and I skipped the onion powder since I didn't have any. The best part was all the veggies -- I was afraid that my husband would find it bland since he doesn't eat his veggies, but he still liked it!

Slow Cooker BBQ Pork Chops

This would have been really good if the chops weren't so overcooked. I put them on low for 7 hours and came home to find them black! Luckily, they weren't so burnt on the inside, and my husband still managed to scarf them down. Can't wait to try this one again, but cook them for much less time.

Easy Slow Cooker Chicken

This was my first time using a slow cooker and it turned out great! Based on other suggestions, I replaced the cream of mushroom soup with water, added 2 cloves of garlic for flavor, and threw in some frozen broccoli. I also kept the chicken breasts whole and seasoned them with salt and pepper. I used condensed rice and although it came out soft, I still thought it tasted very good, and the chicken was perfect. The best part is that my fussy husband loved it! We can't wait to eat it again.
