Guinness(R) Corned Beef
my husband was extremely skeptical about this one...we're both irish/grerman...we had a corned beef cook-off and he's still raving about this one. i steamed the veggies some before adding to the roasting pan for the last 45 minutes, worried the beer might over-power them, didn't use a rack and added the spice pack, chose a pan that allowed the beer to come halfway up the sides of the meat, turned it once....major shrinkage. get a really good cut of meat for this one...i had to get what i could out here in the boonies. definitely do this one again...excellent sammies w/ lotsa hot mustard on pumpernickle
