Caramel-Filled Chocolate Cookies

This were absolutely delicious. I read the reviews and followed others' suggestions: I froze the Rolos for 20-30 minutes and refrigerated the dough for a half hour before assembly. The rolos didn't burst during baking and the dough was easier to work with, though still a tad sticky. I measured out almost exactly a tablespoon of dough for each rolo (scooped it out with a tablespoon and scraped off the excess) and it was the perfect amount because I ended up with over 60 cookies. Odd that the recipe says the yield was only 30. The cookies definitely taste better after they've cooled because the caramel gets much gooier. These were a hit with family and friends.

Slow-Cooker Chicken Tortilla Soup

This was delicious! But I'm only giving it 4 stars because of all the adjustments I made. I followed one suggestion and used frozen chicken breasts. That step made this incredibly easy recipe even easier! I omitted the water and used 2 cans of low sodium chicken broth. I added 1 can each of black, red, and pinto beans (drained and rinsed) to make it a heartier soup. I also followed another suggestion and added finely crushed tortilla chips halfway through to make it thicker. The measurements for the spices I kept the same because the whole family likes spicy food. This soup also freezes really well. Thanks!

Beefy Chinese Dumplings

Delicious flavor all around. I made it exactly as written and it turned out great. One thing that wasn't clear is the size of the wrapper used. We used wanton wrappers which are smaller than egg roll wrappers...LOTS of work, but good. I tried boiling and just got a mess, we ended up steaming them which is more traditional.

Garlic Chicken Fragrant Rice On a Budget

I made this exactly the way it was written and it turned out fantastic. Great flavor, wonderful aroma and very easy to make. My 6 and 3 yr old both ate it up! We had parmesan chicken and asparagus and this rice as a side dish. Wife and I had a little white wine. Delicious. When I make it again I plan to cut the olive oil a little, add more garlic and another green onion. Just my personal taste. Give this one a try.

The Meatball that Fell Off the Table

I followed this exactly as written and it turned out great. I used a cookie scoop to form the meatballs and served it over egg noodles. My two boys, 6yrs and 2.5yrs, have never been so quiet at dinner. Excellent!

Garlic Red Potatoes

This was delicious! I tried to make it a little healthier by using only a tablespoon of butter and 2 tablespoons of olive oil. I also added a little parsley for a bit of color. I had no problem with undercooked potatoes; they were done in exactly 30 minutes. Thanks! This is definitely a keeper.

Grilled Rib Eye Steaks

This was excellent! I marinated the steaks for 15 hours for a Labor Day cookout. I didn't have the green onions on hand so I used 1/2 cup of chopped dried onion. The steaks were so tender, cutting through these was literally like cutting through butter. I thought about reducing the marinade for a sauce like other reviewers did, but it was so flavorful and juicy that we didn't need it. This was gobbled up by my ridiculously picky in-laws. Thanks for a wonderful and very easy recipe.

Southern Moon Pies

My husband begged me to make these. I have to admit I had my reservations, but after tasting my first one, I don't regret it! The cookie part was very easy to make, but I followed some others' suggestions. I used a level tbsp versus the rounded one and flattened it a bit before baking. My cookies still turned out quite rounded (I can only imagine what they would have looked like had I used the full rounded tbsp!) And based on the "too buttery" comments on the frosting, I only used a third cup butter. These were absolutely fantastic! Reminded me of a smaller Suzy Q but not as sweet. Definitely a keeper. Thanks!

Slow Cooker Roast Beef

This was great. So simple to prepare. I added some freshly crushed garlic and used low sodium soy sauce. I served this to a family of picky eaters and there were no leftovers! It was falling apart tender and had perfect texture, not mushy at all. Like others, I didn't cook this on low for the full 22 hours. I cooked it on high for 6 hours then turned it to low for the last 2. Thanks! This was a hit.

Broiled Tilapia Parmesan

Wow! This has got to be the best fish recipe I've come across. I left out the celery salt and lemon juice, added the garlic powder and paprika like others suggested, and used about 1/8 cup of olive oil instead of the butter. This was absolutely delicious. This is definitely now my favorite fish recipe. Thanks!

Pecan Breaded Chicken Breasts

This was a very good recipe. I followed some of the other suggestions to boil the chicken first and I had no problems with it being undercooked. I also added about a tsp of garlic powder. Even my 5 year old was asking for seconds! Thanks!

Oh My Gosh Muffins

Very good but a tad too sweet for my taste. If I make these again, I'll use a lot less sugar. Other than that, the muffins turned out very moist with a nice light banana-y flavor.
