About this Cook
I'm 100% Italian with my mother from Northern Italy and father from Southern Italy. I grew up eating terrific fresh Italian food and once I got on my own, i made sure to take the best recipes from my mother to pass them down after she passed away in 2001.
My favorite things to cook
Tomatoe Sauce is something I have yet to share on this forum. I love to make a large pot of it and then freeze for later use. I'm partial to Marinara because I think it's lighter so I had to spend many month's adjusting my mother's and grandmother's recipes to combine my favorite things they did into my own creation.
My favorite family cooking traditions
I love my mother's manocotti recipe with a filling of meat and spinach. I find very few Italian restaurants make these correctly (where the shell is more like a light crepe instead of a noodle).
My cooking triumphs
See above.
My cooking tragedies
I once tried to make some Italian Cookies based on a recipe my Aunt gave me and it was the biggest mess I ever experienced. Pots/Pans dishes everywhere with a result of a gooey chocolate mess.

Italian Sausage Soup with Tortellini
One of the best dishes I've ever gotten from here. I really was a hit with my family after making this. I did use Hot instead of Sweet Italian Sausage and it was very well received! I will make this again and again.

Alicia's Italian Nachos
I finally got around to making this for a small group and they were gone in seconds. A few suggested changes. I mixed cheddar and mozzarella cheese. On the pitas before baking, in addition to the Parmesan, I sprinkled on some Italian Seasoning and drizzled olive oil over them. One interesting comment of note from my guests - "The basil makes this recipe!" Oh and one other thing - I used Pizza Sauce instead of Marinara sauce and mixed a little parmesan into the sauce.

Sausage-Stuffed Mushrooms
I made this at Christmas time. I thought it was just OK, but to be honest, everyone there gobbled 'em up. So I guess they will stay on my rotation.
