About this Cook
I have a busy house! As a nurse it's hard to plan out meals on the days I work 12 hour shifts at the hospital, but my husband is always willing to pick up and get it done! We've got three kids to keep us busy and one more on the way, so kid-friendly and quick weekday meals are easiest! I love to dabble more in depth over the weekends. I've started a fresh garden with the kids and we grow veggies & herbs. They love to play in the dirt and watch seeds take off and grow.
My favorite things to cook
I love to cook things that my family loves. They love Mexican, Italian and good old comfort food. I have to sneak in some nutrition, but don't tell!
My favorite family cooking traditions
My grandma is the best! She has published her own cookbooks and it's hard to full such wonderful shoes, but she helps me try. Baking with grandma is always a highlight.
My cooking triumphs
Cooking a Thanksgiving feast for the first time for my in-laws without missing a beat was my first triumph several years back. Nothing like the pressure of the in-laws coming over to sample your food. Everyone had a grand time!
My cooking tragedies
I always seem to forget about the rolls in the oven when we serve them. I'm known for overly browned, crunchy rolls. OOPS! My husband is now in charge of hovering over them.

Apple Cranberry Stuffed Pork Chops
The stuffing had great flavor but the chops were tough. I tried it a second time but I drizzled some canola oil on the chops and grilled them over hardwood charcoal. I used the indirect heating method with apple and cherry wood chips to smoke them with. YUM. That method gets 5 stars.
