Out of this World Turkey Brine

This was my first Thanksgiving, and I have never cooked a turkey before. I didn't even know what "brining" was until the day before Thanksgiving! I followed the recipe, but left out the garlic and we only let it set for about 14 hours since we had decided at the last minute to try it. It was fantastic!! The turkey cooked a lot faster than I had planned (10 pound turkey took 3 hours, instead of the recommended 4). And the meat was so tender, it was just falling off the bone - no need to carve at all!! This was so easy to do, and the results are great - you would be silly not to do it!

Chicken Noodle Casserole

Wonderful dish! I made this two nights ago, and it turned out great! I didn't have any savory, so I used Italian seasoning, plus I added one can of french cut green beans. Plus, the leftovers taste great! I will definitely make this dish again!!

Broccoli Rice Casserole

I'm not a fan of broccoli at all, but this was actually pretty good. My aunt makes a great broccoli casserole, and it's the only way I will ever eat broccoli. This isn't quite the same as hers (I'll have to get her recipe and post it here!), but it was pretty darn good! I did substitue cream of celery soup for the cream of mushroom soup, and used 1 celery stalk.

Spaghetti With Marinara Sauce

This recipe was just okay for my taste. I probably won't make it again, unless I did a lot of tweaking. Then again, I can be pretty picky when it comes to spaghetti sauce.

Tuna Noodle Casserole I

The casserole seemed to be a little dry at first, especially after heating leftovers. I have found if you add about 3/4 cup milk to the cheese mixture, it helps out a lot. I also used a small can of peas so they did not dominate the overall taste.

Lemon Square Bars

I have personally never been a fan of lemon bars, so I didn't actually try these. I made them over the holidays, and they were an absolute hit! I will have to make this again in the future for partys or pot-lucks.
