Meatloaf with a Ranch Twist

I misread the directions. I completely skipped #2 and I mixed everything together. It was a pretty tasty meatloaf. I liked it more than the wife. Maybe I'll have to try it again following the directions. It was nice to not be disappointed by another meatloaf recipe from this site.

Steak Tip Marinade

Um ... Wow ... this is good. Made exactly as written. I thought it would be above average, but this is great. The BBQ sauce really makes this. Don't use the cheap stuff. This blended nice. EDIT: THIS TIME used a better cut of meat (NY strip) This is only second to the "Montreal Steak Marinade" that is on the side of the bottle of Seasoning.

Salami Noodle Casserole

Could use a little salt and pepper baked in. Will be a repeat but not a regular. BTW I translated the 6.5 cups of noodles as a 12 oz package.

Sweet 'n' Sour Chops

I'll give it 4 stars knowing that next time I make this I will cut the pineapple juice down probably by half. I think it was a bit much. Just a bit too sweet for my liking, but wasn't bad.

Meatloaf with Fried Onions and Ranch Seasoning

Wasn't bad but certainly wasn't memorable. This is realy missing a lot. Texture is good but it needs herbs or something. I like the fried onion thing. Stuffing didn't offer much aside from texture.

Fettuccini with Mushroom, Ham and Rose Sauce

Everyone ate this meal but no one was impressed. I triple checked and made sure I followed the recipe and didn't miss ingredients. This just didn't turn out anywhere near what we expected. The leftovers were better than the orignal serving at dinner.

6 burgers ... 1 pound of meat ... ? Are these the new minis that all the burger joints are serving? Fair at best and I made 3 burgers out of this.

Manicotti Alla Romana

I thought too much meat. I prefer manicotti to be cheesier. As you know going in, manicotti is a lot of work. These just weren't worth all the effort. They are good but not great. I'll make again but with half or none of the beef. The white sauce is fantastic.

Meatloaf with Sour Cream Sauce

The meatloaf was fair at best. The "gravy" was terrible. As I tasted it while heating I knew I should've bought a jar of brown gravy as a backup. Won't make either again. Didn't throw it away so it avoided 1 star.

Chicken Enchiladas Suizas

These were excellent for me. The wife and kids thought they were spicy. I really enjoyed how the tortillas firm up as if it was fried. Next time I guess I'll leave out the chipotles and maybe find mild green salsa. (Which I couldn't find) These are a little bit of work, but worth it. I ended up with 10. (I think my chicken breasts were bigger than the norm)

Scalloped Corn and Bacon Casserole

Flavor yes, consistancy no. Too mushy. Don't know if it needs more crackers or more time in the oven. Maybe one can of cream corn and one regular one drained? Will try to work with this.

Shrimp Lemon Pepper Linguini

Doubled everything except the shrimp and lemon and it came out good. Did add maybe a TBSP or 2 more lemon juice instead of a whole other lemon. Not 5 stars but quite tasty.

Stuffed Chicken Valentino

This is pretty good. Made as directed except I baked for 40 minutes. (No broiling) Won't be a regular, but will be made again. Note: The leftovers are 5 stars. The flavors really blend.

White BBQ Sauce

Let it sit 3 days after making. This is a weird sauce but it's weird in a good way. Won't replace regular red BBQ but it's a nice alternative. Soaked some pork chops for about an hour and basted as they grilled. Quite different. I'm sure in AL where this is from it is 1000% times better. Just like all the other BBQ. Wife thought it might be better for beef. I thought maybe chicken.

Green Chili Chicken Burgers

The burger isn't bad, the guacamole was marginal. Had to doctor the guac up a bit. I had to add a slice of bread that I ran through the food processor for texture since the burger was too mushy to grill. I'd make again, but not as a regular.
