Chocolate Chip Banana Muffins

These have become a big favorite at our house. I do tweak the recipe based on what I have on hand. Usually, I have a bit more than 1 cup of mashed bananas, so I scale back the oil and sugar a bit to compensate. The last time I made these, I only had vanilla yogurt. I omitted the vanilla and scaled back the sugar. Regardless of how I adjust it, this recipe still comes out great!

Home-Style Brown Rice Pilaf

It's not often you get to combine "healthy" with "comfort" - this dish does it! I usually use 1/2 butter and 1/2 olive oil to saute the veggies. Also I don't add the chickpeas - hubby doesn't care for 'em. Cashews are a great touch that adds a richness to the dish. I like to serve it with soy sauce, and have added leftover chicken or ham to it to make it a main dish.

Southwest Chicken

Taking the advice of other reviewers, I sauteed a little onion and garlic in oil before adding in the chicken. I had cut the chicken into chunks and seasoned it liberally with cumin, chili powder, salt and pepper. After browning the chicken, I added the tomatoes, beans and corn and a dash of cayenne for heat - we like a little heat. Served it on rice and sprinkled a little cheese, sour cream and taco sauce on top - YUM!! My hubby LOVED it. Said it was his favorite of anything southwestern that I've ever made - and I have a killer taco recipe, so his statement carries some weight! It was even better the next day. This is going to be a regular on our menu.

Easy Peach Cobbler II

My mother-in-law is revered for her peach cobbler, but now my husband's family is asking ME to make it because of this recipe! I made a few changes - I cubed the bread instead of cutting into strips, cut back on the sugar, and used thawed frozen peaches because I prefer a fresher-tasting peach. Obviously, it turned out fantastic. This recipe is a great "jumping off point" for other possibilities . . . apple? cherry? I can't wait to experiment with other fruits.

My Country Style Steak

This was really yummy! My husband really enjoyed this dish. I took others' advice and didn't add additional salt since the soup mix has plenty. The leftovers made a great quick stroganoff (sauteed mushrooms, made a gravy from leftover sauce, beef stock, a little thickening and a last minute dollop of sour cream - served over noodles). My husband RAVED about the leftover concotion - the meat was even more tender than the first time. This dish is easy, versatile, and satisfying. Thanks!

Sesame Pasta Chicken Salad

Wonderful flavor! My husband has no problem letting me know if a recipe is a keeper or not. This recipe had him saying "This is a keeper, honey!" after every few bites. I did modify it slightly - did not use green onions, had fresh ginger on hand so used that in the dressing. When I served it (cold), I topped it with some mandarin oranges and toasted sliced almonds and placed it on a bed of chopped bok choy for some veggies. I will be making this again . . . SOON!
