Bebop Baked Beans

I made a half batch of these, using onion instead of green pepper. My husband and I polished them off in one meal. Used Kraft Brown Sugar Sweet & Spicy bbq sauce. This is going to be a regular at our house!

No Bake Peanut Butter Pie

I've gotten rave reviews both times I've made this recipe. Most recently made for out-of-state guests. They looked quite skeptical when I said we had peanut butter pie for dessert. After the first bite, the sketicism was replaced with "make sure we get this recipe!" I drizzled some Hershey's syrup over the top, but the other suggestions of an Orea crust or peanut butter cups on top would be awesome, too. Also, I used light cream cheese and whipped topping and 1% milk - still rich and delicious without the extra calories.

Stuffed Pork Chops III

I used 1" thick chops that were butterflied. Even tho' I simmered them for a total of 10 minutes less than called for, they still turned out a bit dry. The flavor was OK, but nothing special. I doubt I'll try this one again - bummer, 'cuz it sounded so good!

Mocha Chocolate Chip Banana Muffins

Delicious! Fluffy, moist muffins, even with some modifications to make them a bit more health-friendly. Used 1/2 c applesauce and 1/2 butter. Also cut sugar back by 1/4 c, then used both white and brown sugar. I upped the instant coffee by 1/2T; also used half whole wheat and half white flour. I ended up with 12 regular sized muffins, 12 mini muffins, and a mini loaf pan besides!

Italian Dressing Mix

Wish I could give this 4.5 stars. It's a good mix, but wow! it's potent! I would definitely start out a bit conservative when measuring this out and up the amount to taste. But overall, a good solid recipe!

Annie's Fruit Salsa and Cinnamon Chips

Fresh, sweet, and delicious! If you don't want to take the time to make the cinnamon chips, try store-bought cinnamon pita chips or even cinnamon graham crackers.

Delicious Raspberry Oatmeal Cookie Bars

I didn't have raspberry jam, so made 1 batch with blackberry and another batch with strawberry. I took them to our ABF group at church - one friend said she ate SIX of them and was having a hard time not eating more! Will definitely make again.

Baked Potato Skins

A delicious way to indulge in potato skins without nearly as much guilt! Turned out nice and crunchy with lots of flavor from the seasoned oil. These would be great for a gameday gathering!

Mashed Potato Layer Bake

My hubby's family had a dinner where everyone had to bring a dish they'd never made before and I was assigned "potatoes". AAAACK! What haven't I done with a potato before? I saw the rave reviews for this recipe, but still was NOT confident it would turn out as good as the reviewers said. I was wrong - the dish was wiped out in a matter of minutes! My 10-year old nephew went back for the fourth time only to find the dish empty. I couldn't find chive and onion cream cheese, so followed the advice of other reviewers and added 1/4 tsp each of onion and garlic powder to plain light cream cheese. I also nuked my potatoes, but found they didn't cook evenly. I'll either bake or boil them next time . . . and there WILL be a next time! I've been ordered to bring these to our family Christmas.

Debdoozie's Blue Ribbon Chili

Wonderfully simple and tasty! I used home-canned salsa and tomato sauce, which can sometimes taste a bit more acidic than commercial, so I added a little bit of brown sugar to counteract the acidity. The recipe didn't specify whether or not to drain the bean liquid; to reduce sodium, I did drain them and didn't miss that liquid at all. I served this with sour cream and grated cheddar cheese on the side - it was delicious with or without the extras! My hubby has already requested I make this again.

Juicy Roasted Chicken

This has become a staple at our house. So simple and comes out perfectly every time. The only change I usually make is using a bit less margarine (Smart Balance). I wouldn't hesitate making this for dinner guests.

Chocolate Chip Banana Muffins

These have become a big favorite at our house. I do tweak the recipe based on what I have on hand. Usually, I have a bit more than 1 cup of mashed bananas, so I scale back the oil and sugar a bit to compensate. The last time I made these, I only had vanilla yogurt. I omitted the vanilla and scaled back the sugar. Regardless of how I adjust it, this recipe still comes out great!

Home-Style Brown Rice Pilaf

It's not often you get to combine "healthy" with "comfort" - this dish does it! I usually use 1/2 butter and 1/2 olive oil to saute the veggies. Also I don't add the chickpeas - hubby doesn't care for 'em. Cashews are a great touch that adds a richness to the dish. I like to serve it with soy sauce, and have added leftover chicken or ham to it to make it a main dish.

Southwest Chicken

Taking the advice of other reviewers, I sauteed a little onion and garlic in oil before adding in the chicken. I had cut the chicken into chunks and seasoned it liberally with cumin, chili powder, salt and pepper. After browning the chicken, I added the tomatoes, beans and corn and a dash of cayenne for heat - we like a little heat. Served it on rice and sprinkled a little cheese, sour cream and taco sauce on top - YUM!! My hubby LOVED it. Said it was his favorite of anything southwestern that I've ever made - and I have a killer taco recipe, so his statement carries some weight! It was even better the next day. This is going to be a regular on our menu.

Easy Peach Cobbler II

My mother-in-law is revered for her peach cobbler, but now my husband's family is asking ME to make it because of this recipe! I made a few changes - I cubed the bread instead of cutting into strips, cut back on the sugar, and used thawed frozen peaches because I prefer a fresher-tasting peach. Obviously, it turned out fantastic. This recipe is a great "jumping off point" for other possibilities . . . apple? cherry? I can't wait to experiment with other fruits.

My Country Style Steak

This was really yummy! My husband really enjoyed this dish. I took others' advice and didn't add additional salt since the soup mix has plenty. The leftovers made a great quick stroganoff (sauteed mushrooms, made a gravy from leftover sauce, beef stock, a little thickening and a last minute dollop of sour cream - served over noodles). My husband RAVED about the leftover concotion - the meat was even more tender than the first time. This dish is easy, versatile, and satisfying. Thanks!

Sesame Pasta Chicken Salad

Wonderful flavor! My husband has no problem letting me know if a recipe is a keeper or not. This recipe had him saying "This is a keeper, honey!" after every few bites. I did modify it slightly - did not use green onions, had fresh ginger on hand so used that in the dressing. When I served it (cold), I topped it with some mandarin oranges and toasted sliced almonds and placed it on a bed of chopped bok choy for some veggies. I will be making this again . . . SOON!
