Moroccan Lentil Soup

I LOVE this recipe. It is a winter favorite for sure. I do not blend or puree, however, I like the texure and why create more dishes? I add more spice to taste as I cook.

Ukrainian Red Borscht Soup

Very good. I cook my beets with the skins on for about an hour in the water I will use for the soup. The skins slip right off after boiling and its easy to chop or slice them, besides it increases the nutritional value of the soup!

Chicken Flautas

Very good, very easy. I used white corn tortillas and let them fry in the oil maybe 10 seconds each. They were still flexible enough to wrap but got very crispy in the oven. I finished them under the broiler for a minute to really crisp up. My family LOVED this.

Curried Wild Rice and Squash Soup

The soup was very good. Boiling the squash in the chicken broth saves a big step and preserves a lot more vitamins and flavor. Also the amount of orange juice was possibly a bit much? It added a little too much. I used more curry but curries vary a lot. It's a good recipe to "play" with.

Easy Tomato and Eggplant Soup

I made this with crushed tomatoes instead of soup and added some garlic. Served it with cheese over the top and a touch of sour cream. Teste was excellent but texture was a little off.

Spicy Indian Dahl

This was so good. I made a simple flat bread with it and even my husband (who scorns soups or anything spicy) thought it was very good. I only used one jalepeno to turn down the heat for my family but it was easy to spice up one bowl with chili paste!

This was good, I added juice from two limes, more garlic, and slightly less tomato. It was missing something for sure, I am going to keep working on it.

Honey Curried Roasted Chicken and Vegetables

MMMM... this is fantastic! I used olive oil rather than butter and cut the homey down to 1/2 cup. The chicken and veggies tuen out as expected but the sauce is amazing! I'll probably put it on other things rather than make this exact recipe again. Oh, and I put a whole apple inside the chicken while it cooked!

Fish in Foil

So good, SO easy! I used whole trout and put the olive oil, lemon slices and jalepenos inside. I did remove the seeds so the spicy wouldn't overpower the fish. Everyone LOVED it!

Jamaican Beef Patties

The filling was really good, but a little dry. Next time I will use more curry and leave the meat a little more "wet". I also added a few cloves of garlic to the meat.
