I am married (Sept. of 04) and live in central Florida. Although I have been cooking for many years, meal planning for my family is new to me.
My favorite things to cook
I love to bake, but do not do it as often as I once did. Nowadays, quick and healthy meals are more my speed :-)
My favorite family cooking traditions
Holiday baking is big in our family. I ususally bake cookies, breads, or other goodies for many of the people on our Christmas -giving list.
My cooking triumphs
I suppose that would be my Strawberry Bread. I have changed the original recipe so much that I can claim my version as my own :-)
My cooking tragedies
Well... I was mixing a Coconut Pound Cake one afternoon when my sister in law came over. We talked as I mixed and I left out the flour. Didn't realize it until it was in the oven

Cream Cheese Pumpkin Muffins
Yum! I am getting a head start on my holiday baking and made these muffins to put in the freezer. I made a couple of changes to the cream cheese mixture and forgot to put the pacans on top, but they were excellant! I only got 12 muffins, although they were pretty large and I cooked them for about 3 or 4 minutes longer. For my filling, I subbed brown sugar for the plain sugear and rum flavoring for the vanilla. There was too much filling for the 12 muffins, so I saved the rest in a plastic container and plan to thin it out a bit with some milk to use a a dip for fruit.

Banana Cake X
Good cake-- very moist and flavorful. I subbed the same amount of sour cream for the lemon juice/milk mixture and added about 1/2 tsp cinnamon. Made a quick caramel frosting found elsewhere on this site for the top and got great reviews. Will make this again.

Chocolate Pound Cake I
This was very good. My cake was moist and perfect. I made the following changes though: I didn't have enough sugar, so I subbed 2 c Splenda and 1 c brown sugar. Also, the cake was done in 1 hr, 15 min. Adding 15 more minutes to the cake would have made it too dry I think-- just watch in your oven the first time. I frosted it with some melted chocolate chips that I thinned with a bit of evaporated milk. Next time, I think I will stir the cocoa in with the flour-- it might be a bit easier to combine with the batter then stirring it in the last minute. Might try some differant extract flavors instead of the vanilla-- orange, raspberry, or almond would all be good.
