Quick and Easy Tuna Casserole

I was looking for a tuna casserole recipe and was just not sure what I was looking for. I found this recipe, and used it as a "base" if you will. I made several changes, although I am sure the caserole would have been just fine if I followed the recipe to a "t". My changes were as follows: Instead of egg noodles, I used elbow noodles, only because I forgot egg noodles at the store and I had elbow noodles in my pantry. Instead of using 2 cans of cream of mushroom soup, I used one can of cream of mushroom and one can of cream of celery soup. I replaced frozen peas with frozen chopped broccoli and instead of using american processed cheese, I used shredded mild cheddar. I also added some french fried onions to the mix. I topped with a little more cheese and some more french fried onions and baked in the oven until golden. We liked the casserole and will eat it again. It was nice and quick and easy, great for when you are just coming home from work and don't really feel like cooking!

Beef Barley Vegetable Soup

I wanted to make this soup but I didn't have a chuck roast (I did have stew meat) and didn't feel like pulling out my crock pot then a soup pot, so I just made it all on the stove top instead. I also used beef broth instead of boullion cubes. I cooked the cubed beef in some beef broth on top of the stove until tender, then followed the directions for the remainder of the soup. It came out great. My whole family loved it and I will for sure make again. I think next time though for a little "kick" I will use a can of chopped tomatos with green chilis in it instead of the regular stewed tomatoes. Oh, and I also added some fresh garlic into the soup, I can't cook without garlic :) Thanx for the recipe..will be making it again!

Fluffy Pancakes

I normally use a box mix, but my little boy had a friend sleep over last night and this morning they wanted pancakes. Of course I didn't have any box mix in my pantry so I quick went on allrecipes to find a recipe. I didn't taste them but the boys thought they were great. They cooked up nice and fluffy. I didn't have any shortning so I used some vegetable oil and I also added a little pure vanilla extract into the mix. I like the idea that the recipe was already broken down and I got 4 good size pancakes which is what I needed.

Italian Turkey Cutlets

I am sorry, I really did not like the dish. I may try it again with some modifications. The called for amounts of the garlic, oregano and basil were too overpowering along with the italian style stewed tomatoes, which already has garlic, basil and oregano in it. If I try it next time, I will probably omit the added basil and oregano. Also I served with pasta noodles on the side to soak up some of the sauce.

Hoppin' John

I am rating this recipe to include the changes I made to it. After looking at the recipe I thought this was a good base, but sounded as thought it might be a bit on the bland side. Sooo..I made a few changes. First I added some garlic. I use the pre minced garlic in the jar so I added about 1 to 1-1/2 teaspoons. I also chopped up a green bell pepper and added it to the mix along with a can of chopped tomatoes with green chilis (rotell tomatoes)to give it a little extra bite. Also in addition to cooking the soup with a ham bone, verses a ham hock, I also cubed up a good amount of left over ham and added it into the soup at the end. The result was yummy and would make again!!

Hush Puppies I

Well this was my first attempt at making hushpuppies. Normally I buy the mix in the store and do it the easy way, but we were having fish at the last minute and I didn't feel like going to the store just for hush puppy mix. I had all of the ingredients for this recipe in the house and figured I would give it a try. I have to say, that after making some "adjustments" they were the best hush puppies I have ever had. I won't be buying the mix and taking the easy way out anymore (smile). I did add milk as others suggested in previous reviews. I wound up adding just a little more than 1/4 cup though. Also since I was making fish, I decided to add some old bay seasoning into the hush puppy mix and man that really made a difference. I think next time I am going to try adding some green pepper into the mix as well. Thank you for the recipe.

Grandma's Corn Bread Dressing

This was very easy to make, although it came out a little dryer than I would have liked. Could have been my oven since I have a gas oven and it tends to cook a little faster than most... so I think I will try it again, but cook less time. Other than that, I thought it had a nice flavor and do intend on making it again. Thank you for the recipe.

Slow Cooker Swiss Steak

Not that this wasn't good, because it was..I guess I am just used to making my swiss steak with stewed tomatoes and adding green pepper, garlic, onions and mushrooms into the mix. I did want to give this a try though, because of the good reviews, and as I said it was good..just to me it seemed to be lacking a little bit in the flavor department. Thank you for offering the recipe though, and I am glad I got a chance to give it a try.

Bow Tie Medley

With some "adjustments" this recipe was absolutly wonderful and I intend on making this again..and again...What is great about it is you could serve as is..or even add some cut up marinated chicken breasts, or some shrimp into the mix. This time I added a pound of medium sized shrimp..next time, I think I may try some chicken. I also love the fact that this can be eaten cold or hot! Now for the "adjustments" I didn't use a red onion, only because I am not too fond of them, so I used a yellow onion instead, and the whole thing, not just 1/2. I also used a whole red pepper instead of 1/2 and a few more mushrooms than that what was called for. **A note for next time though....the recommened amount of veggies and pasta ratio seemed to be a little off..A 1 lb box of bow tie pasta makes a lot. I think next time I will add 2 zucchini and 2 squash instead of 1 each, and a lot more mushrooms (we just love mushrooms), along with the whole onion and the whole red pepper..Maybe even a whole yellow pepper added to the mix would be nice. I also wonder how this would taste using a can or two of rotelle tomatoes (chopped tomatoes with green chilis) instead of the cut up roma tomatoes....Might give it a nice "bite"

Old Fashioned Chicken and Dumplings

I think this makes a good "base" for chicken and dumplings. It was very good, but I did make several changes, which I know changes the whole recipe. Instead of using canned stock, I made my own by adding water enough to cover the chicken in the pot. I also added a few whole peeled potatoes, some peeled carrots, a whole peeled onion and a few pieces of whole peeled celery. When my stock was done I disgarded the veggies (I just don't think they belong in chicken and dumplings, but they give an EXCELLENT flavor). Then I went on making my stew as directed. I also made one mistake, which was my own fault of course. Instead of making my own dumplings I bought frozen ones, something I will never do again..nothing like making your own (smile) Thank you

Maryland Crab Cakes III

Very good! Had to use canned crab meat because fresh is not easily accessable to us. I have made crab cakes before using bread crumbs, so I did try it with the saltine crackers and I think I like them better that way. The only thing I would do different next time is maybe add some green pepper and some chopped celery. Seemed like they needed just a little more flavor

Apple Crisp III

me and baking just don't mix, yet I have to say, this came out pretty darn good (smile)..I took the advise of others and used 1/3 cup of white sugar and 1/3 cup of brown sugar. I also did not add the water, if I did, I would have wound up with apple soup!! I was looking for a recipe exactly like this because I had way too many apples, yet didn't have any oats in the house so this was perfect. I served it warm with vanilla ice cream and it was a nice treat! Next time though, I think I will take the cinnamon and maybe just a little bit of the sugar and toss it in the apples to coat them before putting them in the pan.

Absolutely the Best Chocolate Chip Cookies

I wish I could have found the mexican vanilla extract in our stores, but no luck...so I had to use the regular real vanilla extract. Still these were absolutly the best chocolate chip cookies I have ever made and believe me when I tell you, I can cook my heart out and everything is wonderful, but when it comes to baking I can't even make the "slice and bake" cookies you find in your grocers refrigerator section..LOL..These came out perfect! so much so that I am making them again today. I wouldn't change a thing!! Thank you so much for the recipe and hopefully one day I can find that mexican vanilla extract and give them a try that way.

Chicken Pasta I

Very good base, but if I followed the directions for ingredients it would have been too dry (not enough liquid) and missing something flavor wise. First of all, I browned my chicken in Olive Oil which adds a nice flavor. 3 mushrooms is nowhere enough, I just kept adding until I thought there was enough. Also added more onion and lots and lots of fresh garlic for flavor. 1 can of tomatoes is also not enough, I added 2, plus a little sauce because 2 was not even enough. I also like to use as many fresh herbs as I can which gives better flavor than dried. Maybe the next time a little white wine in the mix would be yummy.

Salisbury Steak

This was great and a keeper for sure! I did make several changes though... Instead of browning the patties in a frying pan, I baked them in a 350 degree oven until they were browned. Then I drained any grease that was in the pan and poured the gravy over the patties and baked until the meat was done. I did add ketchup but only added a dash, and chopped up some fresh mushrooms and added to the gravy. I served with mashed potatoes and corn and it was a hit. Oh I also seasoned the meat a little more with some garlic powder and a little bit of dry onion soup mix. Thanx for the recipe we were more than pleased!

Slow Cooker Lentils and Sausage

I love lentils and was looking for a little something different to do with them when I happened upon this recipe. Well, lets just say I could not keep my husband from dipping into the crock pot over and over again before it was time for dinner. This was really wonderful! I did make two changes though. Instead of using plain diced tomatoes, I used diced tomatoes with green chilis. I also chopped up a small onion and put it into the mix. I gave this recipe 5 stars because I think it would have been wonderful without the changes I made, we just like our food with a little bit of a "bite" to it. Not only was this meal yummy, but very economical as well. I served with warm crusty bread and a big salad and I was able to feed my family of 5 for under $10.00, with leftovers to boot. Thank you so much, I will be making again for sure!

Slow Cooker Pepper Steak

When reading the ingredients initially I remember thinking that this did not sound like what I think of as pepper steak. When I think pepper steak, I think chinese food. Well..I decided to give it a try anyway, and I am glad I did, because it was good..I just didn't think it was fantastic. I only rated 3 stars because if you follow the directions on cooking times you will wind up with a big pot of mush. I even used round steak instead of sirlion (because of it being more economical when feeding a family of 5) and thought that since it was round steak it would be fine cooking a bit longer, but it was overcooked. I personally like to use my crock pot for meals I can put together in the pot and forget about it until the end of the day. This is not one of those kinds of meals.

Sarge's EZ Pulled Pork BBQ

Was very good but we made this with a few changes. First we did not use the coffee, and second, we used boneless pork roast verses the cut that is suggested in the recipe. We also used some liquid smoke as suggested by another. The first time we thought it tasted a little salty and thought maybe if we cut down on the beef broth that would do the trick. So the second time we made it that is exactly what we did, and it was still a little too salty for my taste. I think next time I will use the correct amount of beef broth and totally omit the liquid smoke..that is what was making it so salty. Other than that this was very yummy and something I will be making again for sure.
