Poor Man's Caviar

Don't knock it til you try it! I didn't have high hopes for this recipe because it's not made with my typical favorite ingredients. I was totally wrong. It's so good and not what I really expected at all. Also, my husband normally wouldn't touch a bean dish to save his life - once I coaxed him into trying this, he devoured it. We'll definitely make this again. I prepared it exactly as described, minus the mexicorn. I had to use regular corn because I couldn't find mexicorn. Still delicious!

Bubble Pizza

Loved this! I'll definitely make it again. My husband said that this is comparable to a deep dish pizza (heavy on the crust). This can be customized just like any pizza. We omitted the veggies and added bacon. Not great for the waistline but it was delicious. Also, this was sooo easy. This recipe is a keeper.

Crispy Orange Beef

My husband commented that the presentation and favor of this recipe was very professional but it just didn't suit him. For somebody who has eaten and enjoyed Crispy Orange Beef in the past, I think this recipe will be a hit. For us, I think this recipe will be retired. The fruitiness of the OJ with the beef just didn't do it for me.

World's Best Lasagna

Time consuming but awesome. My picky husband doesn't like ricotta chesse so I omitted it from the recipe and the lasagna was still excellent. Since it does take a while to prepare, I'll likely double it and make a tray to freeze next time. I will definitely mkae this again though.

My Chili

Fantastic! I made this a no-bean chili for my picky husband and we both loved it. To compensate for the missing beans, I added a large diced green pepper and 2 stalks of finely chopped celery. It was wonderful. I'll definitely make this again. Also, this makes a HUGE quantity.

Buffalo Chicken Dip

My sister says that there's something wrong with this dip... because nothing should taste THIS GOOD. This dip is a hit everytime I make it. I make it exactly as it was originally posted. When I feel like cutting fat a bit, I'll use 1/3 reduced fat cream cheese and 2% shredded cheese and it's still just as delicious. This recipe is definitely a keeper.

Tater Tot Casserole III

It's been said already but I'll say it again - cut back on the milk. I always like to follow the recipe exactly as written when I make it the first time. Adding the amount of milk that this recipe calls for made it WAY to soupy. To get rid of some of the juice, I had to use a slotted spoon to serve this. It was a good, easy, family friendly recipe. I'll definitely make it again... I'll just add less milk next time.

Skillet Pork Chops with Potatoes and Onion

I've made this twice now & we've loved it both times. I prepare it exactly as stated in the recipe and I think it's great. I also love it because it couldn't be easier. My picky husband & 2 year old are fans also. This is a permanent addition to my dinner rotation.

Taco Dip I

Great taco dip. It's always one of the first things to go when I bring it to a pot luck. Any variety of veggies thrown on top goes well. I sometimes throw on some finely chopped cilantro too. Yum.

Garlic Red Potatoes

The potatoes were awesome. My husband kept asking where I bought them. He didn't believe that I actually cooked something so good. I did boil my potatoes for a bit to get them softened up some. They were perfect.

Ten Minute Szechuan Chicken

Ridiculously easy & very tasty. I'm sure it took me longer than 10 minutes to cook but it was still under 30 minutes. My 1 y.o. loved it (I did omit the cayenne pepper). I also added some thinly sliced carrots once the liquid was added to the pan. I will definitely make this again!

Spinach-Stuffed Bread

Very good. It was gone in no time when I took it to a Christmas party. I've made this a few times in the past and I've finally learned that the pizza dough definitely shouldn't be stretched any larger than the recipe suggests. We also enjoy this with a side of pizza sauce.

Quick and Easy Spinach Bread

Italian Wedding Soup I
