Pumpkin Cranberry Bread

I have been making this for years, and it is my absolute favorite bread to make! My three year old requests it all the time, so it's become a year round staple in our home!

Awesome and Easy Creamy Corn Casserole

This was great! I read some of the other reviews, and added about 3/4 cup of shredded cheddar, and everyone loved it! It took about an hour to cook!

Creamy Chicken Lasagna

I thought this was wonderful, and so did my company. It was fast, and I made it with low fat cheeses! I will definitely make it again- it seems too simple to be this good!!

Mom's Zucchini Bread

Oh my gosh! I love it! I took the advice of some others and did 3 cups of zucchini, and I replaced 1/2 of the white sugar with brown sugar. I baked it in a bundt pan at 325- and it took about 70 minutes- but it was WAY worth it!

BBQ Pork for Sandwiches

This was awesome! I let it cook for about 6 hours, and it shredded very easily! I also made Big Al's K.C. Bar-B-Q Sauce instead of a bottle- and it was WONDERFUL!!

Love it! Did a test run tonight for July 4th with the BBQ Pork for Sandwiches recipe- I will definitely make this for the party! I made it exactly as stated- and it's wonderful- not sure why I've been using bottled stuff for so long!

Zucchini Cheese Garlic Appetizer

So easy! I did add just a bit more baking mix- but just a little, and these were great! I served them with shrimp and pasta, and then had some the next morning for breakfast! Great for both!

Mexican Rice II

This is really good! I've made it twice, and the second time I added minced garlic, paprika, onion powder, chives, parsley, a little extra cumin- and I'm probably leaving some others out! Basically- anything that sounded good! The reason for four stars is that we felt it needed more seasoning! But- this is a WONDERFUL recipe to build from- love it!

Stuffed Peppers for Two

Followed recipe just as written, using the tomato sauce with basil, oregano and garlic added in- this gave it a little more flavor. They were great with 96% lean beef, and low fat too!! I will definitely make again!

Artichoke Chicken

These were super easy- yet lots of flavor so it seemed more complicated! Loved it! A great way to dress up a chicken breast, and using low fat mayo makes it very low fat!!

Chicken Enchiladas II

I thought they were wonderful! I boiled the chicken in broth for over an hour before shredding it, and added a little minced garlic in while it boiled. This gave it a little more flavor. Everyone loved these- and they were easy to make! I might try corn tortillas next time- just based on some other reviews!

Italian Breaded Pork Chops

These came out great! I followed the advice of some others and double breaded. I felt this gave it extra flavor! My husband and I both loved them, and they were still yummy the next day at lunch! Would make a great sandwich too!

This was awesome when it came right out of oven- but seemed a little dry the next day! Next time, I think I will add more water to batter to closer match amount required on box!
