Cinnamon Sugar Tortilla Delight

I was up late studying and had a craving for something sweet. I came across this recipe and it was PERFECT! Took care of my sweet tooth and was super easy. I used a mixture of brown sugar (all i had) and cinnamon - it was perfect!

Depression Cake I

I always have the items needed to make this in the pantry. It is wonderful and a nice dessert to make on a budget. With our grocery budget shrinking, it is nice to have a recipe for something sweet that doesn't require so many "extras". This cake is nice enough for company. It would also be nice with a cinnamon glaze drizzled on top, or some powederd sugar dusted on top - if you were trying to dress it up. We like it just the way it is. I use 1 cup water and 1 cup leftover coffee. Also I reduce the nutmeg to 1/2 tsp. just because this is my own personal taste. I have made it both ways and I prefer less nutmeg, however my husband doesn't notice a difference when I do. Great served warm right out of the oven with a nice cup of coffee.

Cinnamon Bread I

This is a wonderful recipe! I made it tonight to have for breakfast company we are having in the morning. The entire house smelled warm and great! Needless to say, my husband tore right into it while it was still HOT and I had to make another one. This will be used again and again. It was not overly sweet and tastes great with a warm cup of coffee.

Mix-Easy Oatmeal-Raisin Cookies

Awesome! I didn't change a thing except adding the extra 1 tsp of cinnamon. My husband ate 6 from off the cooling rack before waiting for them to cool. Wonderful warm with a cup of coffee. So wonderful. Love the use of a cake mix which I seem to always have stuffed in the pantry.

Garlic Cheese Quick Bread

This was wonderful! I had some meatballs in the freezer and wanted a quick bread to make them something special. I whipped this up as muffins (28 min-@350, in a 12 muffin tin). They were perfect! The texture is more like a biscut, crumbly and soft. I could see what others said about it not coming out right as a loaf. I imagine this in a loaf would be difficult to slice and serve. As muffins they were just the right amount of crumbly and soft. I highly recommend making these!

Baked French Swirl Toast

Just had this for Christmas breakfast. It was simple to put together and smelled wonderful baking while we opened presents.I was worried it would be too sweet, but surprisingly it was not that sweet at all. I served it with maple syrup on the side, it was the perfect compliment. I left out the cranberries and used raisins only. Wonderful breakfast treat! I will be sure to make this for many other breakfast celebrations.

Quick Lemon Poppy Seed Bread

This recipe was just what I was looking for. I needed to make many small gifts for co-workers. This worked wonderfully. One recipe made enough for 5 mini loaf pans (each with about 2/3 cup of batter-and about a TBL left for each from the remnants in the bowl) I baked them for 35 minutes and they were perfect. Thanks for sharing!

Salsa Chicken

This recipe was GREAT! I love salsa and I seriously think I could eat this chicken everyday! I served it with yellow rice and a side salad. It also is a simple recipe method that can be used with other flavors. I used the same recipe to make italian chicken, only instead of taco mix I used italian seasoning, garlic powder, and pepper. Topped it with a can of diced italian style tomatoes and then at the last 5 minutes sprinkled mozarella cheese until bubbly. Great simple recipe that is wonderful either with salsa or made italian style! THANKS SO MUCH!

Barbie's Tuna Salad

This is a great recipe! I am on Weight Watchers and made some changes to make it more point friendly. I used 2 TBL fat free mayo 1 TBL reduced fat grated parmesean cheese And as I was making it I also adjusted the other seasonings. I think the amounts listed would be better suited for two cans of tuna.However this is just to my personal taste. Either way I used only 1/2 tsp dill, 1/2 TBL parsley and left everything else as is. Great recipe! I will use this as my main tuna salad recipe from now on :)

Tartar Sauce I

Ran out of tartar sauce and hadn't realized it until I was putting the fish into the oven! Whipped up a batch of this sauce and my husband and I were AMAZED!!! It tasted great. It really tastes much better than store bought. I will be using this again and again. Thanks for the great recipe.

Key Lime Pie VII

I love this recipe. I am from Florida and have had many key lime pies when visiting key west. This is the most authentic tasting pie I have ever made at home. What is best is that it is SO SIMPLE! You can literally whip it up in no time. I used home made whipped topping (heavy whipping cream with a touch of sugar and vanilla) and spread it over the entire pie. I made this for my husbands birthday dinner party. I have since made this pie 3 more times. Everytime we are invited to dinner friends ask me to make this pie for them, it is PERFECT! Do not try another key lime pie recipe on this site, this is the only one you need!

Extra Easy Hummus

I used this recipe for a unit I was doing in my classroom. I had 3 groups of 6 students and gave them all the materials in a bowl. I let them mash it up using forks and then I blended the mash in a blender and let them eat it on pita bread. I was worried they wouldn't like it, but they DEVOURED it. Some of them began eating it straight from a spoon. It really is a great, kid friendly recipe that is easy and yummy. I LOVE how cost effective it is too. It tastes just as good as the 4.00 tubs you can get at the deli and it only cost 88 cents for a can of garbanzo beans. You can't beat that :) I have begun making it at home for myself too.

Old Fashioned Coconut Cream Pie

This is a keeper. It came out wonderful! It takes a LONG time stirring on the stove, but the results are worth it. I used the frozen flaked coconut and did not toast the inside coconut, just the outside. I also did as others suggested and used half and half, coconut milk, and cornstarch. The results were to die for. Next time I make this I will use homemade whip cream. I used frozen whipped topping because of lack of time, and the topping came out OK... for all the time you spend stirring and mixing the filling, put the extra time to make homemade whipped topping. I will definetly do that next time. I made this for my first Easter dinner and my guests were in silence as they ate... I got many compliments. Thanks for the great recipe.

Easy Slow Cooker Ham

This was a great recipe! I made this for my first Easter dinner, it is the first ham I have ever made. It came out wonderful. I was slightly worried about what others said about it being dry, so I cooked it on low for 6 hours. It was on warm the rest of the time (about 2 hours) until I served it. During that 2 hours I basted it every 30 minutes or so. I used a semi-boneless ham that was fully cooked. It was so tender it fell apart as I moved it to the platter. I mixed a ladle full of the juices with 2 heaping tablespoons of apricot preserves to make a glaze. This is how my mom always served ham. It was great and very tasty. I will be sure to make this again!

Irish Soda Bread I

I love this bread! It is hard to tell what it will be like when making it. The dough is very gooey, sticky and thick. I had to add a couple TBL of milk to help me mix the entire dough. I didn't use my stand mixer (attempted to do it by hand) but I think the mixer would make it easier. I used a mix of golden raisins and cherries (dried), I think about 1/2 cup more of fruit would make this amazing! Also about 1/2 way through I coated each loaf with butter. Be careful to put the same amount of dough in each pan, I didn't and had to leave one loaf in for an extra 10 minutes. Ate it warm out of the oven with some butter and coffee... what a great treat! This is a great breakfast item, or a light dessert. AMAZING!

Apple-Cranberry Crisp

Great recipe! I used two cans of Comstock Limited Edition Apple Cranberry pie filling. I had last minute guests and needed a quick fix for what I had on hand. I followed the directions for the crumble and added a dash of cinnamon on top. Next time I think I will add a bit more brown sugar (a couple TBL's) just to sweeten the top slightly. I used walnuts because I didn't have any pecans and it was still great. I think I will try it with the fresh fruit next time. Thanks for saving the day!

Hudson's Baked Tilapia with Dill Sauce

This was a great and quick meal. I scaled this down for two fillets and I still had enough dill sauce to drizzle over some steamed green beans. I used dried dill and only used half the amount, worked great! It had a very fresh and summery taste. I will be sure to make this again.

Veronica's Apple Pancakes

I made these this morning for my fiance. He had been craving his grandmothers apple pancakes. I have never made them before so I was unsure of what they should taste or look like. His grandmother has been gone for 4 years now and I really wanted to make them right. He took one bite and said they were PERFECT. I followed the recipe exactly. I used 2 small fuji apples and served them with warmed dark maple syrup. He said they tasted just like his grandmothers. Thank you for the great recipe. I will be sure to make these again and again.

Great Pumpkin Dessert

This was very tasty! I followed the recipe exactly and I loved it. Only complaint was from my fiance who said the topping was a little salty and he would have rather had pecans instead of walnuts. I will use unsalted butter next time and maybe do half the pan in pecans and the other in walnuts (i liked the walnuts). Other than that I loved this recipe. I will be sure to make this again.

Pork Chops Over Rice

Great quick meal to make on nights when you are busy. I had everything in the pantry and I was able to whip this up without making a trip to the grocery store. Next time I may season the chops just a bit more than called for, they were not as seasoned as I like them. Other than that, they were great!
