Maple Glazed Pork Loin

Reviewed: Nov. 18, 2009
My kids and husband were still raving about this 3 hours after dinner. I doubled the glaze and used soy sauce in place of the vinegar. I did not follow the directions for roasting. I had a 12 inch boneless pork loin that I roasted at 350 (uncovered) for about 80 minutes (fat side UP), and it was moist, flavorful and so tender. I marinated the meat for about 4 hours and it came out great. I also threw potatoes in at the start. My kids took the leftovers and made sandwiches. Very nice glaze!

Crazy Crust Pizza Dough

Reviewed: Oct. 30, 2009
I'm a little torn rating this recipe. I chose not to take reviewer suggestions, and made this as written. It was crispy ~ like a thin, crispy pizza crust, but while the middle was still needing cook time, the edges were burning. I did spread the batter with the back of a spoon to make it uniform, but it didn't help. Also, it really puffed up in areas (most areas) even after pricking it with a fork. The crust came out very "bumpy." It wasn't horrible, but it wasn't good. I loved how quick and easy it was but wouldn't make this again.

Creamy Veggie Potato Stew

Reviewed: Oct. 28, 2009
This was easy and creamy, but really lacked flavor. After making this today, I had to add a lot more seasonings to give it any flavor. The 4 stars are based on the changes I made after following the recipe. I appreciate the ease of this recipe, but there are other recipes on AR with much more flavor.

Strawberry Pie II

Reviewed: Oct. 27, 2009
I've been making this pie for about five or six years and am just now rating it. This is my "go to" strawberry pie recipe! It's easy, it's delicious and I've never had a problem.

French Bread

Reviewed: Oct. 27, 2009
I followed the recipe as stated, and I don't think I should have. I should have taken other suggestions to put ice cubes in the bottom of the oven, and possibly add some olive oil. The texture seemed off to me although the flavor was ok. I think I'll keep looking for a recipe for french bread. I give this bread 3 stars for taste and texture and 5 stars for an easy recipe.

Famous Butter Chicken

Reviewed: Oct. 21, 2009
I followed the recipe and had high hopes for this chicken, but we were just not very impressed. It was moist but we felt it was really lacking in flavor. My kids and I only had a few bites and my husband only had a small amount. I won't be making this again.

Gourmet Chicken Sandwich

Reviewed: Oct. 9, 2009
I've been using this recipe for years and am just now getting around to rating it ~ this is awesome! My family LOVES this sandwich and they request it often! I do make extra sauce for those who like extra. I highly recommend this recipe. It's one my favorites from AR.

Famous Pork Chops

Reviewed: Oct. 8, 2009
I'm not a big pork fan but these were really moist and flavorful. I used thicker cut boneless chops. I only used a few tablespoons of butter and baked at 350 for about an hour (also didn't cover mine). Delicious!

Black Bean Quesadillas

Reviewed: Oct. 5, 2009
These were great! I halved the recipe (which I shouldn't have). If you warm the beans a bit, they are very easy to mash. I added the salsa to taste, plus added chili powder. To make these crispier, bake at 400 degrees for about 10 minutes. They were a hit with everyone in the family.

Peppered Bacon and Tomato Linguine

Reviewed: Sep. 18, 2009
This was very quick and easy to make. It was eaten (my 8 year old didn't like it) but I wasn't wowed enough to make it again. It seemed like it was missing something to jazz it up bit.

Cheese Dip with Beer

Reviewed: Sep. 14, 2009
The flavor of this was very good and it's very, very hearty and filling. If I make this again, I will thin it just a little bit by adding more beer. It's very thick and as it cools it gets thicker. We didn't like it much with bread because it's so creamy. It was much better with crackers and pretzels (anything with a crunch).

This just wasn't for us. My daughter (who loves meatloaf) didn't eat much and my husband requested my regular recipe next time.

Easy Chicken Enchiladas

Reviewed: Aug. 20, 2009
These were actually pretty good and better than I expected. I did add a little extra salsa because it was very cream-cheesy and next time I will add more beans. I topped these with enchilada sauce, a lot of cheese and sliced black olives. I doubled the recipe and they were devoured by my husband and kids.

London Broil I

Reviewed: Jul. 22, 2009
Maybe I shouldn't rate this because I made some bigger changes, but it was AWESOME so I will. Used 1/2 cup soy, 1/2 cup worcesteshire, MORE garlic, olive oil, 1/4 cup ketchup, balsamic (maybe 1/4 cup or less) because tough meat needs the acid, and used round steak (which I despise using). Cut the meat into 4 large pieces, put into a ziplock freezer bag, added the marinade and left it sit in the refrigerator for 48 full hours. UNBELIEVBABLE! My husband still can't believe that was round steak! My oldest daughter ate it plus the leftovers in a salad the next day, and she doesn't like steak. It was amazingly good and had so much flavor! REMEMBER: Slice it very thin! I grilled for about 5 minutes on each side to a perfect medium rare and sliced thinly. Amazing!

Easy Vegan Whole Grain Pancakes

Reviewed: May 29, 2009
I'm not a vegan, I was just out of eggs. I used all AP flour, more cinnamon, and apple juice rather than water. The batter was still a little thick so I added milk until I got my desired consistency. My three kids really liked these.

Cream of Mushroom Soup

Came out just fine, but I added my flour to the butter mixture, made a roux, cooked that for a few minutes, and then I added the broth. It thickened up nicely during the last 15 minutes of cooking.

Zucchini in Sour Cream Sauce

I used yellow summer squash instead of zucchini but did everything else the same. I thought this was pretty good and my family thought it was great. So, it's 4.5 stars from us. I will be making this again!

Alfredo Sauce

Reviewed: Apr. 19, 2009
I thought this was pretty good and it was very easy. I quadrupled the garlic and sauteed first in a little oil, and also added a good dose of black pepper. My family enjoyed it quite a bit. My 7-year old doesn't normally like alfredo sauce, but he did like this one.

Chicken Noodle Casserole

Reviewed: Apr. 7, 2009
I doubled the recipe and I seasoned (well) my chicken while cooking. When I added the broth, I decided to save a step and cook the noodles (I used macaroni) in the broth . This meant I had to keep adding extra broth (quite a bit - maybe five cups) as the macaroni expanded. I did add extra bouillon cubes for flavor and I used frozen vegetables. I poured everything into a small roasting pan (I made a lot of casserole) and topped it with crushed Ritz crackers mixed with parmesan cheese. My children thought it was amazing. For a comfort food type casserole, I thought it was really yummy and I will certainly make this again.
