Mile Hi
Keni's Easy Okra Bake
About this Cook
I am married and have four kids (2 boys, 2 girls ~ although my oldest son is no longer at home). I live in Colorado and wouldn't want to live anywhere else. I love having the Rocky Mountains at our back door. Cooking is a passion of mine and I am always learning new things.
My favorite things to cook
My specialties are my homemade sauce (for lasagne and spaghetti) and my kraut burgers (some call them bierocks). I don't have a sweet tooth so I don't make many desserts. I enjoy traditional Southern cooking, Italian, Mexican and Asian but have no "favorite" things to cook. I do love to grill and we don't wait until summer, we grill all year long.
My favorite family cooking traditions
We have a Halloween tradition of making "saucy dogs" for supper (I have never seen a recipe like it on AR). It's a tradition I have kept since my own childhood and my kids just love them!
My cooking triumphs
I have had many! :)
My cooking tragedies
I have had many! :(

Maple Glazed Pork Loin
My kids and husband were still raving about this 3 hours after dinner. I doubled the glaze and used soy sauce in place of the vinegar. I did not follow the directions for roasting. I had a 12 inch boneless pork loin that I roasted at 350 (uncovered) for about 80 minutes (fat side UP), and it was moist, flavorful and so tender. I marinated the meat for about 4 hours and it came out great. I also threw potatoes in at the start. My kids took the leftovers and made sandwiches. Very nice glaze!

Crazy Crust Pizza Dough
I'm a little torn rating this recipe. I chose not to take reviewer suggestions, and made this as written. It was crispy ~ like a thin, crispy pizza crust, but while the middle was still needing cook time, the edges were burning. I did spread the batter with the back of a spoon to make it uniform, but it didn't help. Also, it really puffed up in areas (most areas) even after pricking it with a fork. The crust came out very "bumpy." It wasn't horrible, but it wasn't good. I loved how quick and easy it was but wouldn't make this again.

Creamy Veggie Potato Stew
This was easy and creamy, but really lacked flavor. After making this today, I had to add a lot more seasonings to give it any flavor. The 4 stars are based on the changes I made after following the recipe. I appreciate the ease of this recipe, but there are other recipes on AR with much more flavor.
