Cream Cheese Pickles

Surprisingly delicious! Honestly I thought this recipe sounded horrible, but it had such great reviews that I had to try it. I'm making these for a Christmas party tomorrow night, but I tested one first and they are so good! I patted the ham dry and spread the cream cheese on the ham as suggested by other reviewers. I also used 1/3 less fat cream cheese and I can't tell a difference in taste at all.

Sweet and Sour Meatballs

Awesome! I used frozen meatballs and doubled the recipe. I also added a can of pineapple chunks which I really liked. They went over very well at our office party!

Turkey Enchiladas

Excellent! I have to say that this is probably the best recipe I have made with our leftover Thanksgiving turkey. I shredded the turkey and simmered it in a pot with a little water and some taco seasoning and onions before stuffing the tortillas. It was absolutely delicious.

Salsa Chicken

I wish I could give this recipe 4 1/2 stars. Its a great quick weeknight recipe. It couldn't be simplier and it has a great flavor, but I like to save 5 stars for recipes that are truly outstanding. I made this exactly as described and I'll definitely be adding it to the rotation.

Grandma's Green Bean Casserole

So good! I was a little anxious about not making the traditional green bean casserole with cream of mushroom soup and french onions on top, but I have to say this was delicious. My husband said it was the best he's ever had. I think I still might prefer the cream of mushroom version slightly more, but this was definitely a nice change.

Tex-Mex Turkey Soup

Absolutely delicious! I've never been a big fan of any type of taco soup because I usually find them bland and ordinary, but this was definitely neither. I made only a couple of minor changes from the original recipe. I used only 2 cups of shredded turkey, I used chicken broth instead of water, and I used 2 cans of black beans instead of 1. It was perfect! I think twice as much turkey would have been way too much. I will definitely be making this recipe every year after the holidays with my leftover turkey.

Pumpkin Butter

Delicious! I used about half the amount of sugar called for and it was still great. I also didn't have quite enough apple juice so I used Hard Apple Cider. It turned out great. I think I might have a big spoonful in my oatmeal in the morning.

Prosciutto Wrapped Asparagus

Amazing! I'm in love with asparagus already so I'm always looking or new ways to prepare it. I basically made this exactly as described except I used goat cheese instead of the Neufchatel. I'm pretty obsessed with goat cheese as well as asparagus so it seemed like a no-brainer for me. I have to say it was divine! I'll definitely be making this a regular.

Homemade Black Bean Veggie Burgers

Very good black bean burgers! I made just as described and they turned out great. I quartered the recipe to make only 1 burger and man was it a whopper (no pun intended). It was huge, and I felt very full and satisfied. Served with a cup of hearty tomato soup.

Chicken Thigh Fricassee with Mushrooms and Rosemary

The flavor was good, but the chicken thighs shrank up really small. I also used dried rosemary instead of fresh and it was like eating twigs. I might give this recipe a 2nd try with bigger thighs or breasts and either leave the rosemary out or use fresh.

Slow Cooker London Broil

I wish I could give this recipe 4.5 stars. It was definitely delicious, but I try to reserve 5 stars for absolutely amazing dishes. I cooked the London Broil exactly as described only adding a few splashes of Worchestershire. After 9 hours it literally fell apart. I made sandwhiches on low calorie hamburger buns with lettuce, tomato and a smear of low fat mayo. It really hit the spot!

Easy Baked Tilapia

This is the first recipe I made in my new bread machine and it was AWESOME! I followed the directions exactly (which I rarely do). It really does taste exactly like Macaroni Grill bread. YUMMY!

Bacon Ranch Pasta Salad

Very good. Next time I think I'll leave out the cheese. I don't really think it brought much to the meal. I also used a pack and a half of ranch dressing mix instead of just one because it didn't taste "ranchy" enough for me with just one. I'll definitely make this again.

Warm Ham 'n' Swiss Wraps

Awesome! I made these today to take for a picnic in the park. They were delicious. The only changes that I made is that I used swiss slices instead of shredded (bought the wrong thing) and I left out the green pepper. I'll definitely be making these again. They would be a great quick meal when I don't feel like cooking.

Baked Ziti IV

Delicious! The only changes I made were that I used Ricotta cheese instead of cottage cheese and I used dried rosemary instead of fresh. I served with a ceasar salad and breadsticks. I'll definitely be making this again!
