Easy Pavlova

YUM! Mine cracked like mad, even though I left it in the oven to cool. However, it was SO GOOD. Crunchy outside, chewy marshmallow-like layer inside. Very cool dessert!

Juicy Roasted Chicken

I cooked the bird breast-side down, added some myer lemon into the cavity and it turned out fabulous! We couldn't "find' the breast back at first, since I forgot I had cooked the thing upside down, but once we did....YUM. Boiled down the leftover bones for stock and had plenty left for a tasty soup the next day. $3 chicken: 3 great meals!

Melt-In-Your-Mouth Meat Loaf

Really easy to cook in slow cooker, liked the tangy sauce on top, but it was a bit sweet. Doubled the sauce per other remarks. Boyfriend and his son both wolfed it down- but it was a little "flimy" on top (even though I used 93/7% fat beef). Still, I'd make it again with my long work schedule. Thanks!

Slow Cooker Split Pea Sausage Soup

First split pea soup I've made that tasted good. (It was a curse, not sure why I couldn't do it in a regular soup pot, I just messed it up several times before). Thanks for a quick and easy recipe! We used turkey sausage and broth instead of bullion. This is WELL worth making a day ahead- it only gets better the next day.

Slow-Cooker Chicken Tortilla Soup

I think I forgot to put the water in, but no worries, it was perfectly tasty and soupy anyway. I threw the chicken in pieces raw and it cooked up in 4 1/2 hours no problem. We had it with cheese, lime, sour cream, avocado and cilantro on top. BF said it was "good" which is what he says about EVERYTHING. What it really means is "make this again a few hundred times, I'll eat it every time". thanks!

Mom's Zucchini Bread

Incredibly moist. Used 2 cups sugar, 3 cups zucchini, just threw everything in the kitchenaid. One 9 by 13 pan and one loaf disappeared in two days thanks to a voracious boyfriend and his 9-year old son. Thanks for making me look like a good baker, despite ignoring sifting and creaming and the like. Going to try this with 1/2 applesauce next time, but amazing written as is. Thanks!

Vietnamese Sandwich

Really tasty and very fast, but it was missing something. Added thin sliced pickled jalapenos, and julienne carrots pickled in vinegar and a little bit of salt and sugar. Added some honey and lime to the pork marinade and bf ate three! Thanks!

Zucchini Bread IV

Was "gifted" a seven pound monster zucchini. Proceeded to make 14 loaves of bread. It's saying something when you can eat ALL of it in two weeks without getting sick of it. Gave some of it back to the original "gifter" of the zucchini and another one showed up with a note requesting more bread. Thanks, (I think,) for the awesome recipe. Next time I quadruple a recipe, I'll think about the size of my mixer. :)

Marinade for Chicken

Yum! Little salty. Next time, less soy and more red wine vinegar. Used skewered bits of chicken breast, marinated chicken before skewering for 3 hours in fridge.

Pasta with Pesto and Scallops

Lovely! Switched red pepper for green, forgot lemon, added a few shrimp and yellow zucchini. Did linguine instead of fettuccine. Be careful using whole wheat pasta, it is a much stronger taste. That said, I used a bunch of the pasta water to thin out the homemade pesto instead of oil. Tasty, easy, delicious.

World's Best Lasagna

Probably useless to write a review, but here's what I did differently: mixed shredded mozzarella with the egg/parsley/ricotta mixture. No extra salt in the sauce, didn't boil noodles, just dumped boiling water over them and let it cool in a pan. Made the sauce, but only simmered it for twenty minutes. Built the lasagna and put it in the fridge overnight. Baked the next day, let it stand for 10 minutes, and pulled out perfect pieces for everyone. :)

BBQ Pork for Sandwiches

Used pork butt. (Cheaper cut). Slow cooker whole way, sort time in the oven with bottled bbq sauce. Good, simple, boys ate it up but I was less impressed. It was a bit dry all said and done.

Crunchy Romaine Strawberry Salad

GREAT salad! I mixed the dressing the night before, toasted pecans and ramen night before in oven with no butter, and put all of it together right before serving. Made for fathers day brunch, two adult guys ate it up, BFs picky 9 year old gave a few bites a try- which is success in our book. Planning to take this to a potluck this week, in season strawberries make this incredibly good and cheap for LOTS of people. (I used 3/4 of the dressing and also chopped the romaine into VERY small bites, tasted great!) Thanks!

Brunch Strata

Wow! Super tasty father's day brunch main course! Didn't really measure, but used one package of mushroom, one red and one green bell pepper, three small zucchini and turkey ham with 11 eggs and 1 cup cream. Also mixed cheddar with 1/2 cup leftover queso fresco. Next time, adding some green chilies. Bread was chunks of leftover artisan bread, and one package of 1/3 fat cream cheese. This was SO GOOD. Used one big 11 inch glass pan and cooked it for 1 hour. Boys loved it, kiddo ate it without noticing or picking at the veggies. Oh- I made this at night, covered it with plastic wrap and baked it in the am. The eggs, cream, cream cheese mix doesn't look good at first, but keep mixing until you get to smooth creamy texture. Thanks~!

Enchiladas Verdes

I messed up and used two jalapenos instead of the serano peppers, as well as roasted corn from the grill that was leftover combined with the chicken. The verde sauce was AWESOME... the biggest mess up was that I over-baked the tortillas in the oven (instead of frying), so I folded the crunchy ones in half and made tacos verde. Very tasty, will actually do it right next time. :) Thanks!

Cilantro-Lime Dressing

Amazing! I could dip bread in this, use it as a marinade for chicken or steak, and eat it by the buckets-full. It hits all the notes- sweet, spicy, sour, tangy, and most of all: delicious. My mom likes to call me for dressings and I'm happy to pass this one along. Food processor makes all the difference, I might save an old bought dressing bottle and fill it with this instead next time. I put in about three times the ginger on accident, and eyeballed everything, and it was wonderful. Thanks!
