So the medical leave is over on 2/17, that is the date I go back to work...Ahh, it was nice to cook the past 2-3 weeks as I recovered from pretty extensive wrist surgery. It was also therapeutic on my hand/wrist, until I overdid it many days with the concoctions that I would make, and then pay… MORE

About this Cook
I am a married mother of 3, married to husband of 28 years who loves my cooking. The kids are always amazed at what I can create from looking at a recipe. Unfortunately, none of them has inherited my love for cooking lol!! Hubby is also a great cook, and he is the grill master at our house - I do the marinating!!! :) I might add that I have moderate RA , rheumatoid arthritis, from which there is no cure. I am on a boatload of medicine for it, and am doing better, but that impedes me in so many ways to cook, stir, twist open jars, and then some. Thank God for my everloving husband who so graciously opens every jar I can't, stirs every dish I can't and helps to cook some things that are just too tough to cook on one's own that has this devastating disease...
My favorite things to cook
Almost anything Italian. Fish is another thing I love to cook, mostly salmon and swordfish. I also like my bread machine!!
My favorite family cooking traditions
Thanksgiving and Christmas at my parents' house. I try to bring a dish to these gatherings for everyone to try.
My cooking triumphs
Taking a recipe and tweaking it to my family's satisfaction. I know all their likes and dislikes, so I use that in coming up with what I can create.
My cooking tragedies
When 9 months pregnant, I was grilling ribs on the BBQ (never did it before!) and closed the lid, they cooked too long and were burnt to a crisp. Add to that I sat down in a lawn chair to ease my pregnant swollen feet and the chair collapsed, sending me to the ground and I had a hard time getting up. It's funny now, but wasn't then lol!!

French Canadian Tourtiere
Husband is French Canadian and he thought this was better than what he remembers his family making, as theirs was too dry, this one was moist. I used all pork only, kept everything else the same to a T! Very good!

Slow Cooker Fifteen Bean Soup
I omitted the cabbage, used the carrots, celery and onion without cooking first; omitted sage and used the spice packet from beans. I made a double batch as the bean bag was 16 oz. and adjusted ingred. accordingly. I tossed everything in from the beginning except the ham steaks, which I cut up and added the last half hour. I cooked on low for about 12 hours - Perfect! I did end up blending about 4 c. of the soup to add some substance, it was fantastic this way. A keeper.

Easy and Delicious Chicken and Rice Casserole
I ended up adding a bag of Italian frozen veggies, some herbes de provence (eyeballed it), the whole envelope of onion soup mix. Had to bake it covered for an hour, hardly cooked. Used bnls, skinless chicken thighs. Took foil off, baked another 30-45 min at 325 convection to perfection!!!! Hubby thought it awesome!!!!! said very good!!!! he said it was 5 stars all the way!!!!!
