Creamy Spinach Soup
I've used this method with all kinds of vegetables (spinach, broccoli, cauliflower, etc.) It always makes an easy, creamy, soup! I use lowfat milk thickened with flour instead of the half and half to make it healthier.

Skillet Cookies I
I used the method from this recipe, but used dried cranberries instead of dates and slivered almonds instead of pecans. The recipe makes very good bite size cookies.

Santa's Chocolate Thumbprint Cookies
These were very good. I accidentally added the cinnamon to the dough instead of rolling the cookies in it, and I liked it better that way. I used crushed candy canes instead of cherries and toffee chips. They were very Christmasy!
