Patti's Mussels a la Mariniere

My husband said this recipe replaced his other favorite clam recipe, which he raves about! I read the reviews and just adjusted a few things. I used 8 cloves of garlic instead of 5 and 3 tbsp. of butter instead of 2. I also waited and added the green onions during the last five minues of cooking. When I reduced the wine broth, it seemed as if I didn't have enough liquid to steam the clams, so I added about 1/2 cup of chicken broth. These were absolutely delicious! The broth was so good to sop up with some crusty bread. I will most definitely be making it again and often!

Peanut Butter Banana Bread

I love regular banana bread, so I figured I would give this a try. I read the reviews and used 3 bananas, two tbsp. mayo, and one cup of smooth peanut butter. I baked as muffins at 350 degrees for 25 minutes and they came out beautifully. Great breakfast!

Cake Balls

These tasted good and people were impressed by them, but they were a bit time consuming and messy to prepare. I did what other reviewers suggested and prepared the cake and cut off the ends. I only used 1/2-3/4 of a can of frosting and I used the whipped kind, and the amount seemed to be perfect. I also froze the cake balls before dipping them into the chocolate coating. The mashed up cake tasted wonderful on its own, and I think the chocolate coating made them a bit too sweet for me. I coated several balls and kept the rest frozen for another occasion. I used a spice cake/cream cheese with vanilla coating and a devil's food cake/buttercream with chocolate combination. I would make again for the people that love sweets.

Sweet Restaurant Slaw

Soooo good! I took the advice of some reviewers and used rice vinegar and then cut back on the sugar. Tasted just like one you'd get at a restaurant. Will definitely make again!

Sage Pork Chops

Really delicious! I followed the recipe almost exactly, except I reduced the salt to about 1 teaspoon and added some crushed rosemary to the sage mixture. I also followed the advice of some viewers and cooked the chops for only 30 minutes. Rather than make a gravy, I served some of the au jus on the side for dipping. I served with a sweet potato mash and salad. My husband loved it! Thank you!

Summer Squash Bread

Delicious! A friend gave me several large summer squash from her garden and we needed a way to use them up. I read other reviews and only used 1/2 tsp. of nutmeg, and increased the cinnamon to 3 tsp. I also added 1/2 tsp. of salt to balance out the sweetness. We loved it and will be making it again. Perfect to make now and freeze later

Tangy Grilled Pork Tenderloin

The flavor was great, but boiling the marinade and drizzling over the meat before serving is a must, or I think the flavor would have been too mild. Great variation for pork!

I thought it was good, but I do think the white sauce was an extra step that was not entirely needed. Next time, I will add some sausage, as some reviewers mentioned, because the filling lacked a little something.

Fruit Pizza I

People loved this and it was very easy to prepare. I pre-baked the cookies, pre-made the "frosting" (adding some vanilla pudding mix to the cream cheese) and pre-cut the fruit. I assembled it all right before a staff meeting and everyone loved it! Thank you!

My Best Clam Chowder

I tried several recipes for many different kinds of chowder and this was the absolute best! I did what others suggested and browned some bacon before adding the onions and celery and to cut fat and calories I used equal parts of 2% milk and half and half...turned out perfect! Be sure to add the vinegar...it really does make the flavors sparkle!

Pita Chips

These were so easy and WAY better and less expensive than store bought ones. I won't spend money on pre-made pits chips again! I used wheat and white pita bread, and I found that the white pita bread had a better flavor.

Garlic Bread Fantastique

This was the best garlic bread I've had and it was SO easy! I read the reviews and left out the salt, and it was perfect. I also added a light layer of mozzarella cheese just before I put it in the broiler....delicious!

Spiced Sweet Roasted Red Pepper Hummus

Definitely delicious! After reading the reviews, I too lessened the cayenne pepper to 1/4of a teaspoon, and it was just enough spice. I din't have any tahini, so I left it our and it tasted just fine. Great way to change up a regular hummus recipe!

French Onion Soup XI

I've tried many french onion soup recipes, and this one was pretty good. I reduced the number of onions to 6 and I added two tablespoons of flour to the onions right before they finished cooking. I used a brown ale and it gave the soup a really good flavor. I added a little salt at the end, but that was just my own personal taste. I would definitely try this again!
