Baked Buffalo Wings

When company was coming I looked for an alternative to frying batch after batch of wings. These were pretty good but I still prefer the fried ones. How I made mine: I baked them on a non-stick rack for an hour without any sauce. I then dipped them and returned to the over for 5 minutes. I didnt have any garlic powder so I simmered some fresh in the butter before adding the hot sauce. These werent spicy enough for us and I had already changed the hot pepper sauce ratio to 3/4 cup pepper sauce to 1/4 cup butter. Next time I will increase the cayenne to 1 1/2 tsp. I had no problem with sogginess, I made sure my wings were really dry and left them in the fridge for way longer than an hour. Make sure to turn them when half done to crisp both sides.

Delicious Black Bean Burritos

Outstanding. I added about 1/2 tsp of chipotle chili powder, a 1/2 cup of canned corn and left out the bell pepper. Added shredded cheese, sour cream and fresh chopped tomato before rolling up. These are wonderful and I didn't miss the meat. This is for sure a keeper!

Colorado Mexican Pizza

Really, really good. Takes some effort but is worth the work. Absolutely huge when made as instructed, you may want to scale it back unless you are feeding a crowd.

Shrimp Fettucine Alfredo

Excellent. Half the pasta amount, use cream instead of the 1/2 and 1/2 to ensure thickening and add about 1/4 tsp of white pepper. I also threw in some sauteed mushrooms. DO NOT saute the shrimp. Add it to the sauce during the last 5 minutes or so of simmering.

Dry and bland. Maybe if you cooked the noodles separately and added some milk to the sauce. Not worth bothering with in my house.

Mrs. Strong's Casserole

I added regular chopped onion to the beef instead of the green onions. Also, put in lots of pepper and seasoning salt. Mix in the tomato sauce, sour cream and cream cheese and a small amount of milk. Add some canned corn kernels and about 1/4 cup of parmesan. Mix everything together (noodles and sauce), top with cheese and bake. Wonderful.

Pleasant Pork Chops

Fabulous! As some others suggested, I added mushrooms with the onions and used 1/2 white wine and 1/3 chicken broth. There are just 2 of us so I only made 2 chops but kept the sauce amount as written and served the extra over mashed potatoes.

Bacon Cheeseburger Rice

Sorry, I didnt like this at all. The BBQ sauce overpowers all the other flavors, the bacon doesnt fit in with everything else and the dish is pretty unattractive. Will not be making again.

Glazed Meatloaf II

Best meatloaf ever with the following changes: double the ketchup (but not the other sauce ingredients) and use 1/4 cup in the meat mixture. Omit the lemon juice and beef broth and add in 1/4 cup of Worcestershire Sauce and 1/4 cup of sour cream to the meat. Add freshly ground black pepper to taste. Mix lightly and you have a tender and juicy loaf.

Easy Lasagna II

I like this recipe a lot. Easy to make, tastes great. I did have a problem with it being watery. I am going to try mixing the extra liquid with the sauce next time and use a little larger pan to see if that makes a difference. It seemed that it just sat on top and did not reach the bottom of the pan because there was no room for it to get there. With a more even distribution, I am hoping that it will take care of the soupiness.

Chicken Enchiladas with Creamy Green Chile Sauce

Best chicken enchilada recipe so far (I have been on the hunt for the perfect one). I made some slight changes: saute 1/2 cup of white onion in the butter before adding the flour. Use 3/4 cup sour cream and 1/4 cup cream cheese. Add 1 tsp garlic and 1/4 tsp cayenne pepper to sauce and omit cilantro. Don't bother frying the tortillas. Just wrap them in a damp paper towel and microwave for about a minute to soften them. Makes prep easier, cleaner and faster with no loss of flavor in the recipe. Also, make sure to coat the bottom of the baking dish with a thin layer of sauce before putting the enchiladas in to keep them from burning on the bottom. This means that you need to make the sauce first but it works out great because you can be prepping other ingredients while its cooking.

Southwestern Chicken Salad

Very good! I used steak once and chicken the other time. Cut the fajita seasoning in half to decrease some of the saltiness. Used chopped sweet onion instead of the green onions, used red kidney beans instead of the black. Instead of the dressing I increased the amount of salsa and stirred in some sour cream. Will make again.

Hash Brown Ham Quiche

Good stuff! I followed the advice of another reviewer and squeezed the potatoes dry with paper towels, mixed in 2 tablespoons of melted butter and baked for 25 minutes before pouring in the other ingredients. I think it could use another egg. Also, substituted swiss for the cheddar and added about 1/4 teaspoon of Tobasco for an extra kick.
