Spinach Stuffed Chicken Breast
Yummy! My fiance just ate this up. I changed the filling to spinach and blue cheese dressing (it was on hand). Another variation is to coat the chicken with Hidden Valley Ranch dressing mixed in flour. I think I used 2tbsp flour and 1/2 cu dressing. The kids liked that one. I also put rice and water in the pan to make a casserole.

Shrimp Scampi V
This has to be the easiest, fastest meals going. And so flavorful. I just started dieting, so I used the olive oil, garlic, a can of shrimps (it was just sitting in the cupboard begging for a chance), crushed pepper, parm cheese, and 4oz of angel hair pasta. It was dinner for me and an appettizer for my fiance. I'm a huge fan of garlic and spice, this did the trick and did I mention fast?

Sour Cream Cut-Out Cookies
This was fun for the kids and I. They had fun using cookie cutters and then shaping the dough into fun shapes like pretzels and cinnamon buns. I think I messed up something because I needed to add about 3 extra cups of flour before the dough got "unsticky." And then I forgot to compensate with sugar so they tasted more like home made biscuits. They did taste good with jelly (my finance's idea) and I had a microwavable chocolate topping to sweeten them up with. As bland as they were, the younger kids, age 6 and 4, couldn't get enough of them! They kept sneaking more and more from the plate as they were coming out of the oven. I will definitely make again but pay more attention to my flour to sugar ratio!
