Banana Chip Muffins II

About this Cook
I love to cook. I'm a senior in high school. I love taking pictures, and photography. I love politics, and I met Barack Obama in June of 2008.
My favorite things to cook
Lasagna, spaghetti, ravioli, I'm a big pasta fan. Breakfast foods are easy and fun, too--eggs, french toast, pancakes, etc. I love to bake, brownies epsecially.
My favorite family cooking traditions
At Thanksgiving, Christmas, and pretty much any other time we have the excuse, my family makes delicious rice pudding.
My cooking triumphs
I don't have any big stories to tell, but several of the recipes that have worked extremely well for me from this website are Cocoa Coffee Milkshake, Mom's Applesauce Pancakes, Shabbat Challah, Cinnamon Bread Delight, Apple Cake I, Banana Chip Muffins II, and I always love my recipe for Oh my gosh muffins.
My cooking tragedies
I don't really have any tragedies. I made a loaf of zucchini bread once and I didn't add all the flour I was supposed to, so it was lumpy. That's about as tragic as it gets for me. Aside from the one time my mom and I tried to make churros for Spanish class and hot oil started sputtering out of the pan off the stove all over the place. Now we know to stick to the easy stuff.

Oatmeal Apple Muffins
So, for a healthy muffin, this was pretty darn good. Relatively low fat, and some good fiber and protein content. I substituted 2% milk for the half-and-half and used 1/2 cup whole wheat and flour and 1/2 cup of white flour. I also omitted the raisins, nuts, and nutmeg to suit my own tastes. I'm VERY glad someone else mentioned the 350/450 mishap or I might have missed it. I baked them at 350 and they came out just fine--I think 450 would be a mistake. The apples are the best part--next time around, I would use more. The muffins are still moist but could use a little more flavor. I will be making these again. Thanks for a great recipe!

Hamantashen II
Oh my......these were a HUGE mess that my mother was not happy about, and they didn't taste that good. Instead of pie filling, I used strawberry jam like I've heard works well in this, and some I used chocolate chips. The chocolate chip ones were dry and the jam ones were extremely chewy but the jam saved them. Maybe it was something I did wrong, but I won't be making these again, sorry.

Oatmeal Gems
Not bad! Used applesauce for shortening, egg sub + egg whites for eggs, omitted pecans. Compared to other cookie recipes I've tried, this one was a lot of hassle for a taste that was good, but not great. I didn't have any ground cloves, so I had to mash whole cloves myself. I only used about 1/2 tsp of cloves, and I personally thought they were a little overpowering. I think the raisin juice was a good idea, and improved the flavor. I think the next time I make oatmeal raisin cookies I'll use part of this recipe and part of another. If you have time and you don't mind cleaning up the kitchen, and you liek chewy, sweet-spicy cookies, then these are definitely for you.
