About this Cook
I grew up in a family who was never really big on cooking. My grandma loved to cook, and my dad had his specialty dishes (I've never found a sugar cookie that matched his!),but my mom just wanted to get it over with. She didn't want a mess in the kitchen either, so I really didn't start cooking until I got married! I've always been creative and enjoy all types of crafts, including painting, counted cross stitch and now fabric arts and digital graphic arts. Thankfully, I had the sense to marry a man who loves to cook! ; ) We moved to the midwest a few yrs ago from Texas. I surely miss the foods from there that we all love. I don't get to spend much time in the kitchen any more though.
My favorite things to cook
I love to make cookies and muffins. There's something about portable, personal food that I love.
My favorite family cooking traditions
Each New Year's Eve, we do a potluck/buffet, even when it is only us. We don't have a formal meal - it is all munchies and crock pot food. When I was growing up, my favorite tradition was Christmas Eve dinner at my Grandma Welsh's house. Every year was the same - we had oyster stew and homemade rolls. I was never a big fan of the stew, but loved the smells coming out of the kitchen.
My cooking triumphs
Cookies have to be the biggest triumph for me. While I can make plenty of dishes, I really only enjoy cookies. I am working on enjoying making pies! The ones I've done are great - I just don't really enjoy making them as much. Thanks to an accident a couple yrs ago, I can no longer stand for long times, so my cooking/baking time in the kitchen has pared down to almost non-existant now. I find that I miss it a great deal.
My cooking tragedies
My first big bomb was our first family Thanksgiving at our house when we were newlyweds. We had a full house. For some reason, I put the sweet potatoes covered with marshmallows too close to the broiler and they caught on fire! We had flames licking from the stove. Instead of getting Hubby, I pulled my brother in law into the kitchen to help put it out! Ha! Everything else was fine, but we still laugh about the flaming taters.

Sweet Potato, Carrot, Apple, and Red Lentil Soup
Well, I have to give this five stars too! I wasn't really sure what it would taste like, since I'd never put sweet potatoes in a stew or soup before! But our temps dropped here, making it a good soup night. I found I had not a drop of broth in the house of any flavor, so ended up using ham base for the background flavoring. I figured ham went okay with the sweet potatoes, apples and lentils, so it should work. It did! I also left out the chili powder, since it didn't seem to make sense with the other flavorings. (I didn't want yam chili.) We had a pot of VERY yummy stew. I only did a little bit with the immersion blender, leaving the majority in small pieces. I added a little instant mashed potatoes for more thickness, and left out the yogurt (wasn't needed). I also added a couple dashes of Frank's Hot Sauce to enhance everything. It was very good, and we are having the leftovers tonight! I think this beats split pea soup. We'll definitely make it again. Thanks for sharing the unusual combination!

Pumpkin Ginger Cupcakes
WOW! These are so good and moist, you don't even need frosting. I made these today, and will be making another batch to take in to Hubby's office next week. I did mini cupcakes, and it made a LOT! Something like 6 dozen, I believe. They are very moist, the flavors blend perfectly, and it tastes so good! I will make this often - we all love pumpkin at our house. I did not have any crystallized ginger and could not find it at the store, so I just doubled the amount of dry ginger. I'll be making full size ones for Hubby's office, and will probably put a light cream cheese frosting glaze on them, although they really don't need it. These would also taste great with walnuts in them. Thank you for sharing such a great recipe!

Pumpkin Chip Drops
I love to make cookies and muffins, and have been baking for around 25+ years now. I would say that they taste like a bowl of oatmeal someone put pumpkin pie spice into, but not as tasty. Save your pumpkin for some other recipe, because this one misses the mark.
