Black Bean and Rice Enchiladas

Great! I normally prefer corn tortillas for enchiladas but this ended up being very much like the wet burritos I like from the Mexican restaurants. I cheated in the prep a bit-made Red Enchilada Sauce from this site, mixed a good amount into cooked brown rice and added the can of black beans. Filled the tortillas (added cheese inside too) and then poured the remaining sauce over the top. After baking, I served them topped with sour cream, avocado, cilantro, green onions & halved grape tomatoes. Delicious!!

Best Big, Fat, Chewy Chocolate Chip Cookie

These really are wonderful cookies. My only complaint is the listed baking time was too long. I shortened it to 14 mins as my oven runs hot but even that was too long and once cooled, the cookies were pretty hard. Next time I'll bake for 12 mins or so only. Flavor, taste and appearance of these cookies is awesome!!

Buttercream Icing

Perfect! I have had other recipes in the past that used either 100% shortening or 100% butter. I don't like the flavor of the 100% shortening and though the taste of 100% butter frosting is great, it just doesn't hold it's shape as well. Half butter, half shortening is perfect-good flavor with stability from the shortening. I did cut the sugar a bit-didn't need it all to get the texture/thickness I needed. Used about 3.5 cups. Sifted the sugar even though the recipe didn't say-didn't want lumps! This is the recipe I'll use from now on-tasted great, looked great, my daughter's birthday cake got rave reviews!

Beer Battered Fried Vegetables

This was fantastic batter! I used it to fry zucchini. Was absolutely delicious. I didn't let it sit for 3 hrs and I tried it with the egg/flour dip and without-didn't notice a difference so stuck with just dipping into the batter and frying. Only addition was some creole seasoning to spice it up. Came out perfect, great texture, nice and crisp. Will definitely make it again!

Indian Relish

This is a really great recipe. My husband LOVES relishes on sandwiches with cheese and has begged me to ALWAYS keep this one in the fridge for him. But he eats it faster than I can keep it made! Going to have to make a huge batch and try canning it. It's great over cream cheese too. I reduce the vinegar and sugar amounts to 3/4 cups each and have made this several times now. Thanks for making my husband think I'm amazing! He says it's better than any storebought, fancy relish or chutney that he's ever had! I too love it with the cream cheese and crackers, it's wonderful! (Though I have to admit that I'm not sure what makes it Indian . . . no matter, it's great!)

Zucchini Patties

These were pretty good but a little bland in flavor. Next time, I'll add more seasonings, maybe some additional cheeses. I will definitely use the potato flakes rather than bread crumbs and flour as I did this time. I think that will make the texture much better and the patties delicious!

Banana Crumb Muffins

Excellent muffins! Great crumb topping. I added vanilla to the batter as others mentioned. I also used oil and applesauce for the butter (was short of butter) and also replaced some of the flour with whole wheat flour. They were perfect!!

Easy Mashed Potato and Roasted Vegetable Enchiladas

These were really good! Though I admit that I changed things a bit . . . used zucchini & peppers for the veggies, coasted them with oil, salt, pepper, chili powder and crushed garlic before roasting. Used the flavored oil in the mashed potatoes instead of butter (made my own potatoes) and added green onions to them. Fried the corn tortillas before filling and used green enchilada sauce. They were wonderful!!

Corn Chowder I

I really like this chowder! I changed it quite a bit though so please forgive me! I didn't use bacon as we are vegetarian. Sauteed the onion in butter, added the potatoes (not pre-cooked) and sauteed a bit, added the flour and then added veggie broth. I let that simmer for a while until the potatoes were tender then added some half & half, a can of creamed corn, half a bag of frozen corn, salt & pepper. Let it cook awhile longer and mashed some of it with my potato masher right in the pot to get the thicker texture. It was really delicious topped with cheese! Great base recipe here, you can add or change what you like! Will definitely make again-easy, inexpensive, and very tasty. The kids loved it too!

Cheddar Dill Muffins

These were ok-not quite what I was hoping for. They were pretty good right out of the oven but not so great once they cooled. They are very biscuit like in texture, probably because of the baking powder. I added a lot more cheese and cut the dill in half. Still looking for a good savory muffin, one that's not a biscuit in disguise!

Risotto with Sun-Dried Tomatoes and Mozzarella

We really enjoyed this. I like the flavor of the sun dried tomatoes, love the idea of using the oil from the jar. I cut the cheese back a bit and added white wine before starting the broth additions. I make a lot of risotto and didn't have any trouble cooking this-it cooked the same as any risotto, took about 25 minutes once I started adding the broth. The only thing I will say is that with the cheese and tomato oil it is quite rich, so be prepared! Very yummy and I'll definitely make it again!

Vegetarian Korma

5++! This was wonderful! We loved it, even more than I expected to. With such simple ingredients and the only spice being curry powder I wasn't sure it would be flavorful enough but I was wrong! I realized after I was done that I forgot to add the nuts-oops! Results were still fantastic so didn't seem to matter. I used 1/2 & 1/2 instead of cream and just a red bell which I added after the potatoes to make sure it was nice and soft. This was a winner and I'll make it regularly!!

To Die For Blueberry Muffins

I thought these muffins tasted great but have to say they didn't look too great by the time I got them out of the pan. They looked great in the pan, and didn't stick too badly as I greased it thoroughly (though some of the sugar topping did stick to the pan as it had cooked on pretty firmly). But coming out of the pan, they did kind of fall apart a bit. A few of them sunk in the middle as others have mentioned. They tasted great though, I didn't change a thing in the recipe. I doubled the muffin part but didn't double the topping and it was perfect. We really enjoyed them and I will definitely make them again. In the future, I might not fill them all the way to the top as recommended-I think this will make them easier to remove from the pan and hopefully prevent them from falling apart! I will also try them with different fruits-peaches in the summer would be GREAT!

Cream Filled Cupcakes

These were great! The filling is delicious!! I used a cake mix for the cake and piped the filling in from the top. I do need to work on my filling technique a bit . . . think I used too small of a tip. I didn't remove any cake to fill them, just stuck the tip in and squeezed the filling in. Worked great, will work even better with a larger tip next time (this time I used a 10-worked pretty good but I like the filling so much that I wanted more in each cake). Used chocolate frosting and decorated the tops with leftover filling. Thanks!!

Pasta Shells with Portobello Mushrooms and Asparagus in Boursin Sauce

Thisi was very good! I used regular boursin, not the pepper as I don't like it. Boursin was a good price at Trader Joe's and I really think it has a much better flavor than cream cheese, so I'd definitely stick with it! I subbed broccoli for the asparagus but I can't wait to try it with the asparagus when it's in season! I will definitely make this again! My only complaint was I wished there was more sauce; probably my fault though-based on other reviews, I cut the broth to 3/4 cup and then let it simmer down for awhile with the mushrooms before I added the cheese. The mushrooms gave the broth great flavor but maybe next time I'll start with the listed amount of broth so that there is more left after it reduces.

Tortellini Minestrone

Excellent! I made it vegetarian by leaving the sausage out and using veggie broth. I couldn't bring myself to use ketchup so used a small can of tomato sauce as others mentioned. I added kidney beans too. Love the tortellini! Everyone loved it and it made lots for leftovers too! Will definitely make again.

Tater Tot Hot Dish II

I was looking for something quick and easy that used items I had on hand and this fit the bill so I decided to try it out. I can maybe see that this would be popular at a potluck or something-where people are only taking a spoonful and eating with other things. As a stand alone main course though, it was fairly unappetizing. It looked ok in the pan but when served on the plate, it was just a pile of slop, not very pretty to look at. But, beyond appearances, the main problem I had was how salty it is. The soups, the fried onions, and the tator tots combine to make it so salty that none of us could eat more than a few bites-and I didn't even add the extra salt called for in the recipe. I did add green beans and cheese as some other reviewers recommended. I guess this just wasn't my family's favorite.

Oatmeal Carmelitas

These are absolutely fantastic! I love them! I skipped the mixing of the flour into the caramel sauce and it still turned out great-I just drizzled the sauce over the top. Yum and a new favorite!!
