Buffalo Cheesy Chicken Lasagna

This was really good, however, I made a few significant changes that I think really contributed to the recipe. I used fresh mushrooms instead of canned and added fresh parsley in the ricotta mixture. Instead of four cups of spaghetti sauce I used 2 cups mixed with 2 cups of alfredo sauce. I used 1/4 hot sauce to give it way more of that buffalo wing taste. I also sprinkled the blue cheese on top of all the ricotta layers as well as the top.

Mid-Summer Italian Bread Salad

I did make a few changes. I cut my bread into cubes and toasted it in the oven on 400 for about 10 minutes. I eliminated the thyme because I didn't have it on hand. I used red wine vinegar instead of balsamic and I finely grated in some fresh parmesan reggiano cheese. It had a good flavor, but even with toasting the bread it was still really really soggy before even putting the dressing on. It was pretty much a flop.

Cilantro-Lime Rice

Pretty good. Not quite as good as "that Mexican place" but a good substitute. I doubled the lime juice and cilantro as suggested.

Spicy Beef Curry Stew for the Slow Cooker

I made this a second time and found it was better. I didn't read the reviews the first time and it definitely wasn't spicy enough for us. This time around I used red curry paste instead of curry powder. I served over rice and steamed long beans.

Microwave Popcorn

Very good! I love popcorn but like knowing what is in it instead of buying the prepackaged microwave stuff with all the preservatives and didn't want to take up more counter/cabinet space with an air popper. This recipe worked great. I used olive oil and stood the bag upright in the microwave. It came out perfectly.

Dirt Cake II

Very good! My son and I made our "dirt cake" for Earth Day! I followed recipe just as is and it was great. The milk amount was just fine you just need to add slowly. I only added about a 1/2 cup at a time.

Roasted Garlic Cauliflower

I make a similar version of this, but its more of a main dish. I brown hamburger and toss it with the ranch style beans, lettuce, tomatoes, cucumbers, black olives, green peppers, ranch, shredded cheese and Doritos.

So comforting. I made this for a Halloween get together. I basically followed the recipe as is for the most part, except I did line my pan with parchment paper before pouring in mix so it easily flipped out onto towel. I also sprinkled the wet mix with chopped walnuts before baking.

Giblet Gravy II

Very good gravy and so easy! I did add extra turkey drippings for more flavor and doubled the recipe to go with the huge vat of mashed taters I had made. Its impossible to mess this one up!

Oyster and Cornbread Dressing

Very very good! I used Jiffy cornbread mix because it gives it a little bit of a sweet flavor which I think helps cut the fishy taste of the oysters, however, we didn't find this fishy at all. Will make again and again.

Slow Cooker Chicken and Dumplings

I thought this was tasty and a good basic recipe, however, I made quite a few adjustments so that is the reason for only three stars. I put all ingredients in the crockpot except biscuits but I also added some shredded carrots and celery and 2 cups of chicken broth. I cooked on low for about five hours. Then I removed the chicken and shredded it. Returned it to the crockpot, added frozen peas and my cut up biscuits and cooked on low for another hour and a half. Very comforting.

Restaurant-Style Hashbrown Casserole

I make this all the time for pitch ins. It is always requested of me now. I place the thawed hashbrowns in the dish and sprinkle with cracked black pepper. Then I mix up the remaining ingredients except for cheese, however, I also add 8oz of sour cream. This makes it in my opinion. Then I spread that on top and then top with the cheese and bake.

Mini Pineapple Upside-Down Cakes

Very moist and yummy! I made as full size cupcakes as well instead of minis so I didn't have to cut the pineapple slices to fit. I also used the pineapple flavored cake mix and went ahead and baked my cherries on the cakes.
