Roasted Chickpeas

I love these and make them all the time!! I roast mine at 375 for 30 minutes on a baking sheet, take them out and give them a good shake to mix them up and then bake another 30 minutes. I mix up my variations of spices. I've used lemon pepper, crushed red pepper flakes, greek seasoning, various Mrs. Dash seasonings, just whatever I'm in the mood for at the time.

Portobello Penne Pasta Casserole

This was really good. I did make a few adjustments though. I used fresh spinach and fresh mozzarella. I also added a few chopped sun dried tomatoes. I also added extra garlic and red pepper flakes to the sauce.

Taco Soup II

I made a few changes to suit my husbands taste. He really only likes black beans, so I used 1 can of corn, 1 can of hominy and two cans of black beans instead of all the other beans. I used no salt added corn and beans and omitted the salt since other reviews said it came out salty. I also used cooked & diced chicken breast instead of ground beef to make it lower in fat. It was delish! I only gave four stars due to all my changes.

Hot Crab and Jalapeno Dip

I only gave four stars since I changed it up but it was delicious! I wanted more of a fondue type dip though instead of so thick so I added fontina cheese and just a bit of cream cheese and milk to help make smooth. I served in the fondue pot with chunks of toasty French bread.

Garlic Prime Rib

Very good! I cut slits in my prime rib and stuffed the garlic into the slits. Then I rubbed the olive oil and salt and pepper all over. I did not use the thyme. Served for Christmas Day with a horseradish cream sauce.
