Alaska Salmon Bake with Pecan Crunch Coating

Very very good! I used a whole plank of salmon and omitted the butter but no other changes. It was gobbled up fast here!

Clam Sauce with Linguine

Baked Whole Cauliflower

This was pretty good. I liked the ease of just throwing the whole thing in the oven instead of cutting it all up. I did coat mine with olive oil instead of butter.

Chickpea Salad with Red Onion and Tomato

I thought this was really good! I didn't have any red onion on hand so just used white, but the red would really make for great color. I also added half of a chopped and seeded cucumber and a couple splashes of red wine vinegar.

Roasted Garlic Cauliflower

I made this as is and thought it was really good. Hubby liked it as well and he does not usually eat cooked cauliflower. **I recently made this again using Broccoflower. Really good!

I love this! I omit the salt due to the saltiness of the olives and always add extra of them. It is even more fabulous with blue cheese stuffed olives!!

Roasted Chickpeas

I love these and make them all the time!! I roast mine at 375 for 30 minutes on a baking sheet, take them out and give them a good shake to mix them up and then bake another 30 minutes. I mix up my variations of spices. I've used lemon pepper, crushed red pepper flakes, greek seasoning, various Mrs. Dash seasonings, just whatever I'm in the mood for at the time.

Poppy Seed Chicken

We love this stuff! I make this all the time, but cut my chicken into bite size pieces instead of using whole breasts. I also always use cream of mushroom soup instead of cream of chicken just because I prefer that taste. Sometimes for a more complete dish we add broccoli florets to it.

Baby Blue Punch

I made this yesterday for a baby shower, however, I did make a few changes mostly because I couldn't find the ingredients needed. I could not find the blue drink mix, so I instead used a jug of the Blue Hawaiian Punch, the lemon lime soda and then white grape juice because I could not find white cranberry juice. Everyone loved it!!! And it was so cute with the ducks floating in it. **I've since made this for Halloween using the green Hawaiian punch and floated those black plastic spider rings in it. Too cute!**

Portobello Penne Pasta Casserole

This was really good. I did make a few adjustments though. I used fresh spinach and fresh mozzarella. I also added a few chopped sun dried tomatoes. I also added extra garlic and red pepper flakes to the sauce.
