Downeast Maine Pumpkin Bread

Delicious! I've made this several times following the recipe exactly, but today tried with 1/2cup applesauce and 1/2cup veggie oil and 2 cups white flour, 1 1/2 cups whole wheat. Couldn't tell the difference. Oh, did 375degrees, 30 minutes for 19 muffins (they were big ones-- filled the muffin cups). My 5yr old and 2 yr old love the muffins, as do I.

Colossal Cookies

Really good. I flatten with the bottom of my measuring cup and then put M&M's on top (in smiley face design) before they bake. I skip the choc. chips. My stand mixer can barely handle mixing these.

Cheesy Ham and Hash Brown Casserole

Defrosted the hasbrowns. Added a diced & sauteed onion, a defrosted & squeezed block of spinach, and some freshly ground pepper. Used light sour cream. Delicious. My husband and 22month old loved it. My 5 yr old did not but I expected as much. We ate it for dinner (and have enough for at least one more meal). Thanks!

Italian Sausage, Peppers, and Onions

Really excellent. Once browned I cut the sausage into 2inch long pieces and when it was all finished served the whole thing on buttered & toasted hoagie rolls so we could eat as sandwiches. The cooking juices made the bread delicious.

Rhubarb Strawberry Crunch

Very good. Can see how you may want to cut back on the sugar slightly, but it could be because we had local berries (northern new york--very red and yummy) vs what you buy at the market.

Mulligatawny Soup I

I put WAY too much curry in (T instead of t) but this still tasted great! I ended up pureeing everything with my immersion blender after it cooked a while and THEN added *cooked* chicken cubes. I used brown rice I had cooked ahead of time. I added a handful of raisins for more sweetness (was worried about how a big granny smith would taste). My 18mo. old loved it. Next time, I may puree in some chopped spinach as well although I'm sure the soup will be a less attractive color.

Cheesy Turnips and Carrots

I needed a turnip recipe & this was very good. Next time I may replace the ginger with some dried mustard. I joined a CSA for healthy eating and here I go cooking the veggies in butter and cheese-- Next time I'll try to cut back on both. I liked the slight crunch of the celery.

Sweet and Savory Kale

Needed something to do with the Kale from my CSA that wasn't a soup. I've never had Kale before. This was very good. Next time I'll go lighter on the mustard. Once it cooks down, I'd say it's closer to enough for 2 large side portions vs the 6 mentioned in the recipe (like spinach, it really cooks down!). We'll make it again.

I never have leftovers of this salad... that's amazing to me. We really enjoy it. Used toasted sesame seeds, almond accents, and skipped poppy seeds.

Jumbo Shrimp and Asparagus

Excellent. Followed exactly, but added 1 clove of minced garlic during the last few seconds of frying the shrimp. Served over brown rice. My family does not like asparagus, but we decided to try this since the farm stand had asparagus. The sauce made it tasty. Even my 3.5yr old carnivore ate it (and asked for more shrimp)

Vegetarian Tortilla Soup

Very good. Used 2 cans chiles. Used immersion blender after adding tomatoes. Added a rinsed can of black beans before the corn. Tasted good over lime tortilla chips with a dollop of sour cream and some cheese on top.

Chicken Enchiladas V

I sliced some chicken breasts into thin pieces (vs shredding). Used 99% fat free soup, reduced fat sour cream, and added most of a can of green enchilada sauce. Also used whole weat tortillas (husband didn't notice). I usually shy away from any recipes that call for condensed soups (for fear of gloppy messes) but this one was good-- next time I may increase the sour cream to soup ratio to get some more tang! Thanks for a new way to eat leftovers!

Actually Delicious Turkey Burgers

Excellent. I melted some fresh mozarella on top and it was perfect. I used dried parsley and followed others in adding a splash of worcestershire sauce and used seasoned salt. I look forward to a leftover one for dinner tomorrow.

Abby's Chicken Rollatini

I've made this a few times and it's delicious! I make more sauce than the recipe calls for (and increase the wine to oil ratio) b/c it's really tasty. Also, I put in a fresh basil leaf in the chicken. When you're done, put the chicken on a bed of rice (boxed quick & easy rice of course) on a nice big serving tray and frame with some mircrowaved frozen broccolli florets and people think they're having a fancy meal that really was very easy.
