Married working mother (son will be 2 in July 2006). Luckilly my husband cooks most week nights because he is usually home first.

I love baking cookies, but try not to because I eat them all! I would love to learn some new ways too cook some fish.

My cooking triumphs
The best thing I think I have learned is how to pan sear a steak and then have it sit in the oven until it's a perfectly even pink in the middle. Other than that Tilapia Parmesan and Abby's chicken rollatini have been great finds on this site!
My cooking tragedies
I don't remember any major disasters-- I remember trying to make a chocolate cake and not realizing it wasn't fully cooked when I took it out of the oven.. big disgusting mess.

Downeast Maine Pumpkin Bread
Delicious! I've made this several times following the recipe exactly, but today tried with 1/2cup applesauce and 1/2cup veggie oil and 2 cups white flour, 1 1/2 cups whole wheat. Couldn't tell the difference. Oh, did 375degrees, 30 minutes for 19 muffins (they were big ones-- filled the muffin cups). My 5yr old and 2 yr old love the muffins, as do I.

Colossal Cookies
Really good. I flatten with the bottom of my measuring cup and then put M&M's on top (in smiley face design) before they bake. I skip the choc. chips. My stand mixer can barely handle mixing these.

Cheesy Ham and Hash Brown Casserole
Defrosted the hasbrowns. Added a diced & sauteed onion, a defrosted & squeezed block of spinach, and some freshly ground pepper. Used light sour cream. Delicious. My husband and 22month old loved it. My 5 yr old did not but I expected as much. We ate it for dinner (and have enough for at least one more meal). Thanks!
