Mama's Asian Chicken and Rice

I was expecting a lot out of this recipe because of the reviews, but we weren't that impressed with it. Not sure why. Just didn't hit the right notes with us.

Golden Sweet Cornbread

Very good. I had to bake a little longer but I think that's because I keep my corn meal in the freezer. I will never buy a boxed corn bread mix again.

So good. I think this is our new "go to" chili recipe. It was really easy to make, which is always a bonus. The only thing I did different was I used one pound of ground turkey and substituted one can of pinto beans for one the cans of kidney beans. I served it with "Golden Sweet Cornbread" from this site and it was exactly what I was looking for! Tasted just as good as my mom's chili.

Cinnamon-Sugar Popcorn

Very yummy! Can't keep my hands out of it. It was a little difficult to get the butter/sugar mixture even on the popcorn, but it's not that big of a deal. Just eat a few uncoated pieces with a piece that got some coating. I'll make it again.

Skyline Chili I

This chili was okay but I thought there was too much cinnamon in it. When we ate it with the spaghetti noodles, onions and cheese, it kind of cut down on the cinnamon taste, but I still think there was too much in there.

Balsamic Tortellini

Yum! We really enjoyed this. It was very tasty and very easy to make, which made it that much better. I did add some garlic to it too.

Hearty Italian Sandwiches

These were pretty good. I would give it around a 3 star and my husband around a 5 star, so we are going middle ground with 4. The only reason I would give it 3, is because I'm not a huge fan of Italian sausage to being with. I made this with ground turkey and ground turkey hot Italian sausage and it wasn't greasy at all. I also added some marinara sauce to the sandwiches before serving and that was really good. Next time I make them, maybe I'll use more ground turkey and less sausage (just because of my personal preference).

Garlic Mashed Potatoes Secret Recipe

Yum! I boiled my garlic along with my potatoes, like other people had done as well and added a little bit of milk while I was smashing these, but other than that, I kept everything else the same and they were delicious! Would for sure make these again. And these are way fancier than just plain mashed potatoes, so they are good to use as a side dish to entertain with as well.

Roast Beef Burritos

Yum. I used leftover roast that we had already shredded in the freezer and instead of putting the tomatoes in while cooking the meat, I put them fresh on the burritos. We also added some sour cream and refried beans to the burritos. Would for sure make these again and it sure doesn't hurt that they were super easy to make.

Apple Crisp III

Very good and very easy. I used two different kinds of apples (one tart and one sweet) and it turned out very well. I did have to cook it about 35 minutes longer than the directions to get the crust to brown, but that wasn't really a problem because I had the time.

Baked Mushrooms

I love mushrooms and these were no exception. Very good and very easy! I did make a few changes though. I didn't use bell pepper, but added two chopped green onions. I didn't add water (cause mushrooms are very wet to begin with) or parsley, but it wasn't missed. I also cut the onion in half and add another clove of garlic and twice the seasoning salt and Italian seasoning. I will for sure make this again.

Chicken Pesto Paninis

My husband and I both really liked these sandwiches. We added a little cream cheese, used chicken lunch meat and left out the green pepper, just cause we don't really like it raw, and it was excellent. We both thought it tasted like something you would get at a restaurant.

Sweet, Sticky and Spicy Chicken

This turned out really good! I did take others advice in their reviews and floured my chicken before cooking it and I think it really helped the sauce thicken up during cooking too cause ours was really thick and syrupy. I also cubed my chicken instead of cutting it into strips and it turned out really good. It is really spicy though, but we like it that way!

Moussaka

My husband and I did not care for this dish. I have had moussaka at Greek diners before and really liked it, but this one was just mushy. The texture was weird. My husband said it was like eating pumpkin pie because of the texture and the taste of cinnamon and nutmeg.

Clark's Quiche

Best quiche I have ever had! I cut down the servings to 12 but kept the two DEEP dish pie crusts and it was the perfect amount of filling. I didn't use any parsley and I cut back on the cheese a bit too after reading some reviews. I also mixed everything together before adding to the pie shells instead of having layers. It was sooo good though! I will for sure make this again and I'm really happy that I have another one in the freezer waiting for me right now!

Pork Chalupas

Very good! I added half a package of taco seasoning and some more garlic powder while this was cooking. I also added some jalapenos at the begining of cooking because we like things spicy. We served this as nachos. Also, I cut this recipe down to 4 servings instead of 12 and two people ate off of it and there is probably enough left for 2-3 more whole meals with 2 people eating at every meal. It makes a whole lot!

Mini Pineapple Upside-Down Cakes

I took these to our Christmas Eve dinner and everybody really liked them. The cake was very moist and not too sweet. I ended up having to fill my cupcakes pans to the top with batter because there wasn't much room once the pineapple was in it, but it wasn't a problem.

Boiled Bagels

These bagels turned out as good as the local bagel shop! I was so happy. The only thing I did different is I flavored mine with some dry pesto mix and topped them with provolone cheese before baking (next time I won't add the cheese until the last 15 minutes of baking).
