Mini Pineapple Upside-Down Cakes

I took these to our Christmas Eve dinner and everybody really liked them. The cake was very moist and not too sweet. I ended up having to fill my cupcakes pans to the top with batter because there wasn't much room once the pineapple was in it, but it wasn't a problem.

Boiled Bagels

These bagels turned out as good as the local bagel shop! I was so happy. The only thing I did different is I flavored mine with some dry pesto mix and topped them with provolone cheese before baking (next time I won't add the cheese until the last 15 minutes of baking).

Three Cheese Manicotti II

Very easy recipe. I cut down on the basil because I'm not a huge fan and made my own sauce, but this was really good. My husband even went back for seconds and he never does that. He said this recipe is a keeper.

Tortellini Soup I

This was really good. I made it with Hot Italian sausage and I didn't have any red wine, so I added a splash of balsamic vinegar and a few dashes of red pepper flakes. Next time I make it, I'm going to leave out the sausage but that's because we aren't really big fans of Italian sausage.

Hot Pizza Dip

YUM! This dip is so good! You can't go wrong when you make it. You can even make it with low-fat cream cheese and you can't even tell the difference. I didn't add the bell pepper to it and I baked it in the oven to get the pepperoni a little crispy and it is so good. I think you can pretty much add whatever you want and take out what you don't and it will be a hit!

Slow Cooker Buffalo Chicken Sandwiches

YUM! I made these just slightly different than the recipe. I added all of the hot sauce to the chicken to cook and none at the end and I didn't add any butter. I also added a slice of cheddar cheese to these. So good! I ate my sandwich with bleu cheese and my husband ate his with ranch. He said it's a keeper and I agree!

Sour Cream Noodle Bake

I made this with low-fat cottage cheese, ground turkey, omitted the butter, regular cheddar cheese and whole wheat egg noodles. It turned out pretty good and was easy to make. My husband even liked it, so that's really saying something because he is picky sometimes.

Stuffed Artichoke Hearts

Made these for mother's day and they were so good. I couldn't find artichoke hearts by themselves so I just bought canned whole artichokes and hollowed them out and filled them with the filling (which made for a very difficult time). I didn't use any lemon pepper, used garlic powder instead of garlic salt and I also added some of the parm cheese into the filling. If I can find the artichoke hearts, I will make them again.

Jalapeno Chicken II

Yum! I did change a few things though and didn't use any bacon in the recipe. Also, instead of butterflying the chicken and rolling it around the jalapeno and cream cheese, I just slit a hole in the chicken almost all the way through and slid it inside. No leaking of cream cheese that way. Next time the husband wants me to try using jarred jalapenos and see how that goes.

Chocolate Trifle

The family always asks me to bring this dessert to holidays. It's so good but so rich. It also looks really pretty in the trifle bowl and has great presentation. Also, it really easy to make!

My Country Style Steak

Eh, not that great. The steak was still tough and didn't have much flavor to it and the gravy in the end was way too watery so I added some cornstarch mixed with water. Again, not that great.

Baked Brie in Puff Pastry

Oh so good! I cut my Brie cheese in half and put a couple tablespoons of pesto in the middle of it before wrapping it up and baking it. It did need to be cooked a little longer than stated but it was a big hit! Also, make sure to serve it hot. It really loses it's wow after it cools off.

Cranberry Sauce I

I have always hated canned cranberry sauce so I really wanted to try fresh. I'm so glad that I did! I made the recipe just as it is except when it was done I blended the whole thing to make it smooth. It's so yummy! Mine didn't seem to tighten up as much as I would have liked but that's okay. Also, as a heads up, if you put a lid on your pot while making to prevent splatter, keep an eye on it! I didn't and it overflowed.

Olive Chicken II

This recipe has been sitting around my house for awhile because I was nervous about making it. I should have just made it! It was delicious. I added more olives than the recipe called for, left out the wine and used all chicken broth and cubed my tomatoes instead of quartering them. I served them over pilaf because it's what I had and I will for sure make this recipe again.

Zucchini Parmigiana

My husband and I did not like this at all. I think there was way too much riccotta in it and not enough flavor in the dish at all. All you could really taste was the bread crumbs on the slices of zucchini. I think if you used a jar sauce instead of just tomato sauce, maybe it would be better? For all the work that goes into egging and breading the zucchini slices before baking and the outcome that you get, I won't be making this again.

Peanut Sesame Chicken with Mushrooms

Linda's Lasagna

Very good recipe. I changed a few things like adding a can of mushrooms, used ground turkey instead and reduced fat cheese. It was great though! My husband and I both really liked it. And if you are feeling weird about using cottage cheese, don't be! You won't even really be able to tell much of a difference. My husband actually prefers it over ricotta cheese.
