Corn Dog Muffins

Really good! I just followed the directions on the package of cornbread, which was smaller then this recipe calls for, and it worked out well. Didn't add sugar because it was sweet cornbread mix. I made them a second time just as cornbread, cutting up the dogs really small. They were a hit.

Crispy Fish Fillets

My whole family loved this. I followed the recipe exactly, but added some old bay to the fish and did dredge it in flour like others have suggested. The instant potatoes give the fish such a crispy golden brown crust. It turned some ordinary cheap fish (flounder in my case) into something delicious. Thank you.

Spam Musubi

Good recipe. I skip the step with the rice vinegar, just plain rice is fine. Frying your spam, then marinating and then frying again gets rid of a lot of the fat as well. Low sodium spam works best. I've also had some people prefer is as a sandwich - rice, seaweed, spam, rice.

Creamy Pesto Shrimp

Very good recipe. Like others, I used half and half instead of heavy cream and less butter to cut down the fat. I also used smoked gouda cheese because it's what I had, added mushrooms (that were sauteed before), onions and garlic to sauce. It was a huge hit with everyone. This is a great starter recipe. I want to try it with chicken or the crab like suggested. Thank you!

Garlic Chicken

Great recipe. I used panko and butter with some dried minced garlic. It worked very well and was such a quick recipe. I didn't add the cheese because I didn't have it, but I will try it again when I do have it. This is a really easy recipe to switch up with different oils and herbs.

Simple Scones

Very good and very simple to make. The only change I made was use yogurt instead of sour cream because that's what I had. I want to try use different flavor yogurt next time to see how it turns out. I made two batches. One plain cranberry and one cranberry lemon (made with True Lemon). On one batch I cut and baked it and the other I baked without cutting them and cut afterward. I think from now on I'll just bake it whole because it was less messy. This is a great starter recipe that lends itself well to adding your own touches. They are even better the next day. Will make again. Thank you so much.

Darra's Famous Tuna Waldorf Salad Sandwich Filling

Very tasty. I did add less apples, pecans instead of walnuts and for the rest I added to taste. Served it on a wheat roll with red leaf lettuce, tomatoes, and jarlsberg cheese. Great sandwich!

Spicy Crispy Beef

Great tasting. Instead of sugar (my mother dislikes sweet tasting meat) I added sesame oil, and garnished with roasted sesame seeds, red pepper flakes and green onions. It was spicy, but not sweet. I've also tried it with added orange juice and zest instead of water. You end up with a nice spicy orange ginger beef. Very versatile recipe, but good made just as is as well.

Tofu Peanut Stir-Fry

Taste good. I think the taste really depends on the peanut sauce you use so use a good one. Tofu takes a lot longer than 5 minutes to brown. I used fresh green beans, brocolli, carrots and green onion. The tofu is also good just fried without the egg.

Brown Sugar Meatloaf

This was great. The only changes I made was using quick oatmeal instead of crackers, since I didn't have any crackers and then of course adding a bit more salt since I lacked the crackers. I did add a little less than 1/2 brown sugar as suggested, but I do think I could have used the full 1/2 and it would have been fine. Wonderful recipe! Thanks so much. I will make this again. My family is already asking again for it.

Hamburgers and Ketchup Gravy

This is very good and very simple. Great over noodles. The only problem I had was the hamburger fell apart somewhat. It didn't effect the flavor, so it doesn't bother me. The only changes were I add more ketchup to the gravy and some garlic. Thanks.

Shrimp Burritos

These were great. I used chicken, but look forward to trying shrimp soon. I added some green onions and avocado as well, but served the salsa on the side. Wrapped them up like a burrito and covered the rest in foil to eat the next day. They stored well. Thank you.

Curried Coconut Chicken

Baked Potato Soup I

I'm not even a fan of potato soup and I loved this. I made just a few changes. I used much less bacon than called for because I didn't have enough. It worked out great. The soup is so rich, you don't need that much bacon. I also used sharp cheddar, light sour cream and a bit of garlic. At the last few minutes I threw in a couple of cups of fresh mushrooms. It was great! I did make some of my potatoes a bit underdone so I could have some texture in the soup. I will make this again. Thanks!
