Sauteed Portobellos and Spinach
We loved this recipe. It was a hit with everyone. We made a few changes, I used olive oil instead of butter, fresh spinach, I used 3 cloves of garlic and instead of the parmesian I used feta cheese.

Herbed Eggplant Slices
I would make this again but I only had dried herbs so I did add olive oil to it to spead it on. Next time I think I will try grilling the eggplant instead of putting it in the broiler.

Balsamic-Glazed Salmon Fillets
I made this and my family loved it. I did let the marinade sit on the salmon for about 20 minutes and I also grilled the salmon instead of broiling it. I will definitely make this again.
