Unbelievable Chicken

AMAZING!! I rarely hand out five stars, but this one deserves it! The ingredients create a wonderful flavor - so refreshing. I cut my chicken into inch pieces, marinated, and cooked in a cast-iron skillet with the rest of the marinated. Put chicken over a salad and used the marinade as the dressing. Served with breadsticks. Husband was very impressed. Thanks for a recipe that I will make again and again!

Catherine's Spicy Chicken Soup

Excellent! A great soup to adjust for your own preferences. I definitely had to kick up the spice with some more chili powder and cayenne pepper. I also added some red and green bell peppers. So healthy, but hearty!!

Best Peanut Butter Cookies Ever

Because of the lack of flour, these cookies fall apart very easily. That being said, the flavor is great! I rolled mine in sugar before baking.

Chicken Flautas

These turned out to be amazing! I put jalepenos in the chicken mixture and used more picante than called for. I also bought some Queso Fresco (the kind that is often used in quesadillas) and used that instead of Cheddar and Monterey Jack cheese. My husband only orders flautas at Mexican restaurants and I think he preferred these! Served with beans, guacamole, and sour cream.

Slow Cooker Buffalo Chicken Sandwiches

These are so easy, yet flavorful. I only used a 12 oz bottle of buffalo sauce and it was enough. In fact, it makes for a very sloppy sandwhich, so make sure you have a lot of napkins! (even after a added a tsp of cornstarch). Served on wheat kaiser rolls with blue cheese dressing on them. Thanks for a great recipe!

Slow Cooker Chicken and Dumplings

I was so excited for this because of the reviews, but what a disappointment. My husband commented that all is tasted like was biscuit and chicken - nothing else. I even added more spices and the cream of chicken soup overpowered the dish. I love chicken and dumplings, but I will be looking for a new recipe.

Becca's Taco Soup

What a GREAT soup for a cold night! I have to say, I kicked it up quite a bit with about a tablespoon of Cayenne pepper, tobasco sauce, red pepper flakes, and a can of green chiles and some jalapenos. I also used the whole packet of taco seasoning. I took someone else's recommendation and substituted some of the tomato juice with tomato soup (I had extra in the pantry). Served with multigrain tostitos. My husband pretty much ate it like a dip with chips... either way, we both LOVED it. Thanks for the great recipe!

Honey Pork Oriental

This sauce was a nice variation for the chicken (I substituted) and white rice meals I like to make during the weekday every once in awhile. The gravy and honey combo worked, but I thought the sauce could have used a little bit more flavor. Thanks for the recipe!

Beef Bourguignon II

This recipe smelled great while cooking and turned out beautiful. I used the two cups of red wine (a cheap pinot I had on hand) and I didn't think the sauce was overpowering at all, just delicious. I only gave it four stars, though, because my husband wasn't too impressed - he thought it tasted just a lot like normal pot roast. I used fresh mushrooms and pearl onions. Served over mashed potatoed and with pulled bread to dip in the sauce. Yum! Thanks for this recipe - I'm sure I will make it again!

Apple Maple Crumble Pie

This dish was unexpectedly delicious! I went to an apple fest and brought back locally grown apples to use in the recipe. What a treat! I doubled the "crumble" because that is my husband's favorite part. Instead of using just the maple syrup, I tossed the apples in half the maple syrup, and substituted honey for the other half(again, locally made from the apple fest). I then lightly sprinkled the apples with cinnamon. I also added cinnamon, nutmeg, and a little bit of cloves to the crumble mixture. I cooked it for 35 minutes as the recipe says, but left it in as the oven cooled down for about 40 more minutes. The apples turned out perfect. Served with ice cream and coffee. People were making yummy noises the whole way through! Thanks for the great recipe!

Tomato Chicken Parmesan

This is a staple in our household! I use fresh mozzarella instead of Monterey Jack. Great with toasted garlic french bread. Love it, love it, love it!
