Gourmet Mushroom Risotto
this really is quite delicious. make sure you use enough salt and parmesan if you do use low sodium chicken broth.

Mexican Sugar Cookies
Light cookies somewhere in between shortbread and sugar cookies. Perfect for a treat that isn't too rich.
