Zucchini Quiche

Yummy! I sliced white onion to saute with the zucchini, and I added bite sized pieces of crispy bacon before the mozzarella cheese. My husband has been raving about this.

Saucy Beef and Vegetable Casserole

I added shredded carrots and sliced mushrooms to up the vegetable level. I also sliced the zucchini because the grated seemed to disappear when cooked. This was a hit with the family.

Mixed Greens Salad with Tarragon Dressing

I made this for 12 friends and it was a hit. We always have salads and I wanted to try something different. This is easy, pretty, and the dressing plus the sesame seeds makes it different. I made the dressing about 5 hours before serving and the flavor was wonderful.
